Heat vegetable broth over medium heat. Add red onion, and cook for 5 minutes.
Add bell pepper, and cook for about 10 minutes, or until tender.
Add mashed tofu and cherry tomatoes, and cook for another 3 minutes.
Remove from heat, and mix in avocado, cheese, salsa and chives. Sprinkle with salt and pepper.
Spoon tofu mixture onto each tortilla. Roll up and enjoy.
