Happy Hump Day! Being that it has been quite awhile since I linked up to the What I Ate Wednesday blogger party, I decided to join in on this fun this week. Today's WIAW post features my favorite eats from the past week - because as any normal food blogger, whenever I eat something tasty, I snap a photo or two! So what goodies has this vegetarian been munching on? ... [Read More]

Dinner in 10: Black Bean Burger, Cheddar & Ranch Salad
From time to time, people I know will bring up my blog and say things like, "All of your recipes look great, but I think they're too complicated for me." While the word "complicated" when referring to cooking is very subjective, and I feel like most of my recipes are not all that difficult or time consuming, I do understand that some people don't enjoy preparing a meal or care to be savvy in the kitchen, and simply want to be able to eat something they can feel good about that took 15 minutes or less to make. Guess what? Healthy eating does not have to be time consuming. Sure, it may take more work than, say, pulling through a drive-thru, but it doesn't need to be a huge, intricate task to make a nutritious dinner. In fact, a lot of my dinners are thrown together really easily. I have a ... [Read More]
Veggie Tofu Stir Fry with Brown Rice
Happy, happy Friday! Hope that you all have some fabulous plans for the weekend. I've had a great week in Jersey hanging out with family and girlfriends, and have some fun plans that I'm looking forward to for the weekend. My week has been full of good food, and there are definitely certain eateries that I simply must hit up when I'm in town. One of those places is Veggie Heaven (my post on the restaurant can be viewed here), which I just chowed down on for dinner: (I'm digging my fortune!) And speaking of yummy, healthy Asian food, I have a new recipe to share today! ... [Read More]
Awesome Ways to Eat Apples this Autumn
Happy, happy Friday! So in case I haven't told you before, I'm obsessed with fruit. Every type of berry, banana, melon, kiwi, peaches... and the list of fruit that I can't get enough of goes on and on! Fruit is sweet, it's a natural whole food, and it can easily be incorporated into a diet in endless ways. Topping the list of my favorite fruits is the illustrious apple. In my household apples disappear quickly. I buy probably a dozen of them every time I make a food store trip, which you think would last for at least a bit with only two people in my house, but they don't. In fact, I'd love to be eating an apple at this very moment, but we unfortunately ran out yesterday. Each of us eats at least an apple a day. But hey, I'm not complaining, because you know what they say... An ... [Read More]
Grilled Nectarines with Banana Honey Soft Serve
Last weekend my mother-in-law, hubby, and I were sitting at my kitchen table. We had just finished up a yummy dinner, and all of a sudden, I jumped up. ME: "Ooooh I have to make dessert now!" THEM: "But we're pretty full. Why the rush?" ME: "Because it's going to get dark soon!" THEM: "We're using the grill for it? We can still grill after the sun goes down." ME: "No we can't, because I have a feeling it's going to be yummy, and if it gets dark, then I can't take pictures and blog the recipe!" Ah yes, bad lighting... classic case of #foodbloggerproblems. ... [Read More]
Apple Pie Smoothie
While I like to get creative with my meals, there are certain foods/types of meals I eat almost daily. This list includes some type of protein/granola bar, Greek yogurt and smoothies. While my smoothies have for the most part been very summery lately (like watermelon smoothies every other day!), recently I was craving more of an autumn-ish type of flavor with my smoothie meal of the day. Call me crazy, but sometimes on a dreary summer day - or even on a perfect sunny day for that matter - fall flavors are just what I'm craving. Enter this guy: In case you're wondering, I know that the above image is a completely autumn themed photo and it's July, but I'm taking a Photoshop class for work and brush strokes - including the above leaf one - was one of my recent lessons. You see, I'm being a ... [Read More]
