Hey there! Hope you had a great weekend and Easter celebration. I had plans to attend a vegetarian festival in town but the event wound up getting postponed a few weeks, so my Easter Sunday turned into a productive weekend day instead! My hubby and I are in the process of revamping our bathrooms and a few other things in the house, so we spent a lot of time picking out mirrors, faucets, paint, and toilets (so glamorous, I know!), and working around the house doing things like calking all of the holes in the master bathroom from the previous tenants (they loved to drill holes all over the place and hang up things excessively - lucky us!) and trying out paint samples on the front exterior of our home. We currently have a bunch of different colors randomly painted in the front, but we ... [Read More]

Blueberry Almond Granola
Recipe creation is a funny thing sometimes. At times, I come up with an idea for a recipe moments before and I just throw ingredients together. Other times, I have a recipe in my head for weeks and weeks that I just have a feeling will be a winner that I will want to share on here, but it takes me awhile to actually make and photograph it. The latter was the case with this granola. When I randomly threw a bag of dried blueberries into my shopping cart one day, the idea of making granola with them immediately popped into my head... but then I wound up eating all the blueberries before I could get to making any granola. Oops. So then I had to wait until the next time I found myself in a food store with dried blues to make this recipe. But, the next time I went to make this ... [Read More]
Dark Chocolate Cherry Cashew Granola Cups
“Believe that you can and you’re halfway there.” – Theodore Roosevelt Hello, and Happy Presidents Day to all of you fellow Americans! How did you all spend your Valentine's Day? My hubby and I decided to head to the beach to celebrate the occasion. He surfed while I caught up on a few magazines (more specifically, I dreamed up our next vacation while reading Islands, then read a Self issue with Cameron Diaz that has been sitting in my magazine rack for a year and a half), then we had a picnic and watched the sunset. Noshing on good food with my hubby + perfect weather + a bottle of refreshing riesling + a beautiful sunset = the perfect low-key Valentine's Day in my book. Speaking of the beach, lately a bunch of you have asked me about the weather in the San Diego area this time of the ... [Read More]
Black Bean Banana Squash Enchiladas
Hey friends! Whose in the mood for some Mexican food? Due to my love for beans, avocado, cheese, tomato (salsa!!), rice, and tortillas, I am definitely a Mexican food fan. Cheese & veggie quesadillas are one of my go-to easy dinner ideas when I want to get something on the table fast, and I could eat guacamole probably every day and be a happy camper. In the past, I haven't been a big enchilada fan though. I never could pinpoint why I wasn't crazy about them until somewhat recently, when my hubby and I had dinner at our friends' house, and they made us some authentic Mexican grub. I really liked the ones that they made, and I realized it was because they weren't greasy and soggy as they are in restaurants sometimes. Since then I've been to a few healthy restaurants and ... Mediterranean Wedge Salad with Chickpea Vinaigrette
Ever heard of the phrase, "If you're bored then you're boring"? For some reason I was thinking about this the other day in the context of food as I was photo editing this recipe. If you eat the same foods day in and day out and are just kind of blah about your meals, you're most definitely a boring eater. And you're probably bored with your diet. Let's talk about salads in this context. Numerous people have said to me, "I can't eat a lot of salads because they just get boring." ... [Read More]
2-Minute Berry Banana Sorbet
Happy, happy Friday! Any fabulous plans for this weekend? I'm looking forward to my long weekend full of football watching, a hiking date with my hubby, doing some recipe experimentation, a workout with a girlfriend of mine, and a mix of both doing some productive things and relaxing. Today's topic is a never-ending love of mine - fruit. I have a serious obsession with fruit, from apples and banana to cherries and strawberries. In fact, while I enjoy veggies, I have to kind of plan them into my meals mindfully. Otherwise, on the produce front, my diet would consist of all the fruit and none of the veggies. Since I have a huge sweet tooth, I'm always finding ways to make meals that could be dessert, but are also healthy and nutritious enough to be considered a wholesome meal. I'm sneaky ... [Read More]
