Hello! Whew, it's been a busy week - so busy that I didn't get to do my usual Wednesday blog post yesterday. I've been pretty consistent with a Monday/Wednesday/Friday schedule for awhile, and it's rare that I'm here on a Thursday...well hi friends! So shall we hop right into the topic at hand? Delicious food, of course. Last year I planted an herb and veggie garden, and out of everything, my tomato plant has flourished the most. It's a total hog that has crowded the rest of my raised garden bed, and at some point last summer it overtook the zucchini plant next to it. As it grows and spreads out of control, we continue tying it to new wooden sticks to hold its different ever-growing branches upright. Certainly no complaints here though, because it's been producing lots of ... [Read More]

My Top 5 Hot Breakfast Ideas
I absolutely love starting my day on a healthy note, which is why my mornings always include a nutritious breakfast. There’s a reason why our morning eats are called the most important meal of the day: Breakfast breaks the fast that your body has been enduring overnight, gives you energy, and gets your metabolism revved early in the day. In honor of February being National Hot Breakfast Month, today I'm sharing 5 of my favorite hot morning meals with you guys. Let's get to it! 1.) Protein pancakes. A week never goes by without me making pancakes of some sort! Here's one of my go-to protein pancake batter recipes: Combine the following in a blender just until combined, then form into a couple of pancakes on a griddle over medium-low heat. Cook until lightly browned on each ... [Read More]
White Broccoli Pizza Pockets
It's Friday! This calls for a celebration in the form of a pizza party.... ....a pizza pocket party that is! Pizza pockets are like a cross between a slice of pizza and a calzone... except calzones are known to be humongous, and pockets have perfect built-in portion control. These guys are also more neat & tidy to bring to work as leftovers than pizza. First, we take a precooked whole wheat pizza dough to rest on the counter coated in some flour. You can be an overachiever and make your own dough, but truth be told, I most often take the easy route and buy dough from the farmers' market or my local grocer. Next, we chop and sauté some garlic, onion and broccoli. Once cooked, we combine the veggies with the mozz and ricotta cheeses, then add in some salt, pepper and lemon ... [Read More]
Easy Chocolate Peanut Butter Banana Yogurt Muffins {+ Mighty Nut Powdered PB Giveaway!}
Nut butter, oh how I love you so. At any given time, there are probably 10 jars of nut butter in my pantry. I most often spread it on fruit or throw it in my smoothies for some extra creaminess and flavor. I also am a fan of incorporating peanut/cashew/almond butter into my baked goods, like today's muffin recipe. One brand of nut butter that you'll always find in my kitchen is Peanut Butter & Co. I especially love their Dark Chocolate Dreams peanut butter! While I love smooth nut butter, powdered peanut butter is also a staple in my kitchen. So, you could imagine my excitement when I got involved in a Fit Approach collaboration with Peanut Butter & Co. to experiment in the kitchen with their new powdered peanut butter line, Mighty Nut. Created from quality USA grown peanuts, ... [Read More]
Banana Date Caramel Smoothie + Weekend Recap
Hi friends! Hope you all had a great weekend. I'm off from my PR job today for Columbus Day, so YAY for 3-day weekends! I'll be spending my extra day off doing blogging and health coaching work instead, running some errands, cleaning, going for a hike at our nearby favorite park, and taking my Batpuppy to the vet (just for an annual thing)... Backing it up to the beginning of the weekend, I kicked off my post-work Friday with a trip to the Del Mar dog beach on another 90 degree day: I love it at the dog beach, it's so beautiful and such a happy place! We hadn't been to the dog beach since the beginning of the summer because during peak beach months, dogs are only allowed on one section of the beach on their leashes. My dog is a maniac and doesn't like to be constrained by a leash on the ... [Read More]
Mexican Potato Pancakes
Hi there! First thing's first: The winner of my non-GMO goodie bag giveaway is Mariah. Congrats, Mariah! I've emailed you for your address. Here's a fun little fact: October is Non-GMO month! Speaking of October, can you guys believe that we're already a week into it?! As a food blogger, I've been having a bit of a tough time getting into an autumn recipe groove since it's been so hot and summery in the San Diego area. I've been seeing soup recipes and pumpkin everything all over the place, and I just couldn't get into it all of last month as I cannonballed into my pool every chance I got to try to keep cool. Fortunately, we finally got some rain early this week (!!) and temperatures have been in the 70s. It has been glorious! It's apparently going to be 90 this weekend, but the break in ... [Read More]
