Making pizza at home is one thing I simply don't get sick of. While I most often make either a margherita pie or one topped with mozzarella, zucchini, spinach, and roasted peppers, I like coming up with new ways to keep pizza night interesting. With dough sitting in my fridge on Monday, visions of a brand new pizza recipe floated through my head: salad pizza. This meal is the best of both worlds: whole wheat pizza dough to please the carb lover + a healthy dose of mozzarella to make it cheesy, yet it's also a recipe packed with veggies and goodness to provide your body with lots of vitamins and nutrients. I thought of what ingredients I most often use in my salads and also had on hand at home, and I came up with lettuce, tomato, artichoke hearts, avocado, red onion, plus a touch of ... [Read More]

Hearty Whole Wheat Waffles with Strawberry Sauce
It's officially Memorial Day weekend! I hope that all of you reading this who are living in the states have lots of fun plans for your [hopefully long] weekend. I am super excited for the next couple of days. In the morning Adam and I are heading up to Napa for the weekend! It is a much needed mini vacay for us, and will definitely be involving some of our favorite things - wine, hiking, food, and time together! I have the perfect recipe to share today for those of you looking for a fancy, healthy breakfast recipe to try out over this holiday weekend: A couple of days ago, I realized that I hadn't used my waffle maker in quite awhile. Obviously this realization called for my whipping up of a new waffle recipe ASAP. I mixed ingredients up as I went along, which can either turn out really ... [Read More]
PB Cherry Granola Apple Sandwiches
Hi friends! Today was just another manic Monday filled with the usual activities. I had a long, sweaty workout at the gym this evening, and now my body is feeling pretty tired. I think it's going to be one of those nights when laying down on the couch and watching some TV will feel great! But first, I want to share a healthy, easy snack/light meal combo that I make often... in fact, I had it for breakfast just this morning: I've seen variations of apple sandwiches around, and while I may have mentioned eating them on here before, I don't think I've ever shared my take on this yumminess. I think this combo is great for people who don't have time or energy to prep a healthy snack or late-night bite to eat. I also think this is a perfect thing to whip up for kiddos! Let's face it: A lot of ... [Read More]
Pan Fried Sesame Chinese Noodles with Veggies
Happy hump day! My morning flew by, and now I'm taking a break from work to eat some lunch (breakfast for lunch today: protein pancakes with strawberries & honey) and share this dish with you: Sometimes I like a bit of burntness or crunch to my food - not just the usual crunchy pretzels or chips, but I intentionally do things like burn my sweet potato fries a bit. So when I nabbed soft Chinese noodles at the grocery store recently, I had the idea to pan fry them instead of just cooking them as directed. After cooking the noodles, I used just enough sesame oil to fry them until lightly browned, and then combined the pasta with sauteed portobello mushroom, red bell pepper, broccoli, yellow onion, garlic and sesame seeds. It added just the right amount of crunch to these normally very ... [Read More]
Lemon Cashew Cranberry Date Bars
Yesterday was one of those days when everything just goes well. First, I got a lot of things checked off my to-do list for work. Then my time at the gym was a tough, sweaty workout. I switched it up and tried the rowing machine for the first time to get more of an arm workout in and really liked it! I'm definitely going to add rowing into my repertoire of cardio exercises, especially when my legs are sore and need a bit of a break. Have I mentioned lately how I love trying out new types of exercise?! Last night I had a dinner date with a girlfriend of mine that I met living in San Diego, Tiffany. She was in town for work, so we had dinner together. I was excited to have see her and have some girl time -- I've been missing that since moving to the Bay Area and not having any good ... Healthy Recipes Ideas to Celebrate Cinco de Mayo: Easy Black Bean Quesadillas + Vegetarian Chili
Happy Friday! You may or may not have realized that Cinco de Mayo is coming up this weekend on Sunday. While Mexican food can drum up thoughts of greasy nachos doused in cheese & sour cream and sugary margaritas, you can still celebrate the holiday with healthier fare. Here are a few recipe ideas to try out if you feel like being festive this May 5th: Spicy Tomato Cilantro Salsa This simple recipe is a great way to put a homemade touch on the (typically jarred) salsa that you usually find at gatherings. Whip up in 5 minutes flat and serve with multigrain tortilla chips. Black Bean Quesadillas To healthify a simple cheese quesadilla recipe, I pack veggies into the mix. If you're looking to keep the calorie and fat content low for your Cinco de Mayo ... [Read More]
