Although I thoroughly enjoy spending time playing around in the kitchen, there are certainly plenty of days when I just want to quickly make a nutritious and yummy meal -- get in the kitchen, and get out of there! This kind of instance happened a few days ago. In deciding what to whip up, I first started off with my favorite wraps: La Tortilla Factory's Smart & Delicious Tortillas. I've been buying them for awhile now, but I just noticed a "Made Local" sticker on them for the first time. Sweet! Tofu Breakfast Tacos
Another weekend has flown by, and Monday came oh so quickly. As I've mentioned before, I telecommute for my job, and working from home has its perks: Sometimes I work in my pajamas. As a matter of fact, if I have a conference call at 8 am or earlier, it's an almost guarantee that I will not be dressed yet. I also get to work with my dog sleeping at my feet under my desk the majority of the time, which is pretty sweet. I'm lucky enough to have a pretty flexible schedule. If I need a breather or am having writer's block, I can go for a walk with my pup or take a workout break. Hi there! My Sunday morning has definitely started off on the right foot: I awoke to a message from my best friend saying that her and another girlfriend of mine are coming to visit me next month (YAY!), decided to have a living room yoga/stretching session in my PJs while my hubby and puppy still snoozed, and then I made a nice green monster smoothie to get my veggies & fruit in. Banana Pumpkin Pie Bowl
Hi friends! Hope that your weekend has been great. Here are the highlights of my past couple of days: My Friday morning began with a quick hour hike with Harley at our favorite nearby park. The hike became a bit adventurous when we found ourselves in a standoff with a fox - and I must say, my dog looks a lot like a fox! We all stared at each other for awhile, and then the fox ran into the fields and crouched down. I wasn't sure if it was planning on attacking us or if it was just scared himself, but I didn't want to take any chances, so we turned around. This is exactly how I felt when I woke up this morning! My family left for the airport today. It's always a bit sad to say goodbye to them knowing we won't see each other for awhile. My extra long weekend was packed with lots of fun, but I think it all caught up with me, because today I was exhausted! I'm sure all of the wine drinking didn't help. ;-) I'm glad that I did that three-day detox just about a week before they visited, because my liver took a beating with my family in town. Hey, it's okay if that happens once in awhile right? All I can do is take a nice break from alcohol and eat super clean moving forward - which is exactly what I plan to do! Goddess Kale Salad
Happy first day of summer! Summery things I did today include: Going hiking with Harley... ...and thoroughly enjoying this dinner on my patio this evening... Lightly fried zucchini + beefsteak tomato + cheddar + horseradish mustard = one bangin' grilled cheese. I was craving grilled cheese all day, and this guy totally hit the spot. I refrained from eating a second one... though I easily could have! And now onto more yummy eats... Recently I had a blogger date with Gina, the chick behind Health, Love and Chocolate.
