Some days I'd love nothing more then to experiment in the kitchen for hours. Other days, I'm not in the mood for playing around when it comes to my eats. The latter was the case over Labor Day weekend. The entire three days, I just wanted to make some yummy food in as short amount of time as possible. This was my masterpiece-in-less-than-thirty-minutes meal of the weekend: It all started off with one my favorite veggies, zucchini: I adore zucchini fries. Almost anytime I see them on a restaurant menu, I'm compelled to order them. I've made zucchini fries at home numerous times, but for some reason they haven't made it onto the blog thus far, so today I'm sharing my version of zucchini fries! First, I cut the zucchinis into fry-like pieces: Next I whisk an egg in a bowl, and ... [Read More]

Oatmeal Pecan Baked Peaches with Cinnamon Honey Greek Yogurt
Happy weekend! I'm psyched for the weekend because two of my girlfriends from Jersey, Meaghan and Marla, are flying in to visit me tomorrow. These ladies were roommates of mine in college, both of whom I've talked about on my blog before. I'm so excited to show them around my new area and have some fun girl time! Now onto the title of this post... Locally grown peaches have been everywhere lately, and I'm loving it! Ever since making wine-baked peaches, I've been thinking about other ways to bake peaches for breakfast or lunch instead of dessert (read: no fro yo involved). Yesterday, I came up with one pretty damn delicious peach recipe for lunch: First I sliced a ripe peach, placed it in a small baking dish, and poured an almond milk/vanilla extract mixture over ... Banana Apple Cinnamon Mini Muffins
Lazy Sunday mornings are the perfect time to play around in the kitchen. After sleeping in late today, I decided to procrastinate cleaning my house by first doing some baking. Ever since I nabbed a mini muffin cup tin a few weeks ago, I've had mini muffin ideas floating in the back on my mind. The recipe started with a ripe banana and Granny Smith apple... Hi, how cute are these mini muffin cups?! I couldn't resist snapping a picture with a few of the sunflowers I picked up at the farmers' market yesterday for $3 [FABULOUS]. I love the idea of mini muffins because they're small enough as a baby snack or part of breakfast, but big enough in size to be a nice little dessert to satisfy a sweet tooth, and also easy to grab on-the-go. I love the combo of apple, banana, and cinnamon, and so ... [Read More]
Quinoa Green Bean Salad with Marcona Almonds
Hi friends! Happy Hump Day! Hope you're having a good one. I'm taking a little lunch break to blog today. I ran across this awesome quote earlier: Well isn't that a good healthy living rule of thumb?! And speaking of plants, I have quite a nutritious, delicious recipe to share today: It all started when I happened to see a recipe with marcona almonds somewhere. It reminded me how much I love them, and all of a sudden I was on a mission to nab marcona almonds and create a recipe that incorporates them. Once I decided that I'd make a quinoa salad, ingredient ideas just started dancing in my head. I have a fresh mint plant that I've barely used recently. The other day I got a whiff of the plant while watering it. I love the smell of fresh mint, and I started thinking that I need to ... [Read More]
Strawberry Almond Oatmeal Bars
Hi friends! Check out the best thing I've seen all day: Photos That Only Dog Owners Will Understand It had me cracking up this morning. A lot of them are so true! Here are my favorite photos that are applicable to life with Harley girl: Okay, so Harley hasn't actually done that last one per se that I know of, but given the opportunity, I'm sure she would! The bed picture makes me laugh because Harley was terrified of her dog bed when we brought it home. For the first few nights she slept next to the bed and refused to step on it, but now she loves it. She also has a favorite blanket that has a million holes in it from her chewing it, and she literally wraps herself up in it like a person at least once a day. It's hysterical! Horrible lighting, but case in point: Food Moving onto ... [Read More]
No-Bake Summer Veggie & Lemon Ricotta Lasagna
Growing up, I was not a fan of corn on the cob. I didn't despise it, but I just didn't really get what was so special about it. It seemed as though everyone ate it on a daily basis in the summer. Fast forward to now, and all of a sudden I like corn on the cob - and enjoy cutting it off the cob and throwing it into recipes even more. My husband, on the other hand, thinks that corn should only be eaten on the cob. But when it comes to persuading him to like foods, I tend to be pretty persistent. He was once a bean hater, and now I hardly ever hear a complaint when I throw chickpeas in our salads. In fact, he now voluntarily orders lentil soup sometimes. Point of the matter is, I'm not giving up on throwing corn into recipes just yet my friends! So when I came across a recipe in the ... [Read More]
