Happy May! It just doesn't feel like the start of May is upon us unless I've seen at least a few Justin Timberlake "It's gonna be May" memes across social media. Am I right? And speaking of said month, this weekend is Cinco de Mayo! I enjoy any excuse to eat Mexican food, and while this Saturday I'm going to be flying to the east coast for most of the day, I have a Cinco de Mayo inspired recipe to share with you guys today. Nachos are one of my favorite Mexican inspired dinners, but they can easily be super high in calories. In my experience, it's not hard to eat three servings of tortilla chips (Have you ever measured out one serving of tortilla chips? It's depressing!). But for this recipe, we swap out the usual chips for homemade sweet potato chips. Sweet potatoes are full of ... [Read More]

Black Bean Taquitos with Avocado Lime Cashew Cheese Sauce {vegan} // 5 Super Bowl Recipe Ideas
This Sunday is the Super Bowl, which I always equate with not only football, but food of course! As a huge football fan, I usually get a little sad this time of the year when the season is winding down and the games are no longer on normal Sunday, Monday and Thursday times. But this year, I only feel a smidge sad because my team, the New York Giants, were TERRIBLE this year & it was often sort of painful to watch them play. Still, as a Giants fan, it's an interesting dynamic to have a Super Bowl game be between the Eagles and the Patriots. On one hand, the Eagles are the Giants' nemesis, and being so geographically close to one another in New Jersey & Philly, it's easy to hate on each other. On the other hand, the Patriots are annoying to anyone not a Patriots fan. Tom Brady is ... [Read More]
Crispy Chickpea, Avocado & Tomato Lettuce Wraps with Nacho Cashew Cream [vegan]
These flavorful, filling lettuce wraps are made with crispy chickpeas, diced avocado & tomato, & dairy free cheese made from cashews! They're perfect for a low-calorie, nutritious dinner or appetizer. If there's one food that I usually recommend to people to eat more of, it's beans. They're so healthy and versatile, and it's so easy to incorporate beans into my dinners. I use black beans in Mexican dishes all the time, but the bean that I probably like the most is garbanzo. There's just one problem: My husband, who I've slowly turned into a black bean eater, isn't crazy about chickpeas. Sometimes I'm sneaky about getting him to eat chickpeas, and I've learned that he likes them in certain ways. After I typed that sentence, I realized that I sound like I'm talking about a 3-year ... Mediterranean Barley Stuffed Peppers
Hi friends! How was your weekend? Did you celebrate St. Paddy’s Day? I was flying cross-country all day Friday on the actual holiday, but I had a chance to celebrate the Irish holiday yesterday with my parents. I’m in Jersey this week visiting family, and went to a winery yesterday with my parents that had a live Irish band playing. It made me want to be back in Ireland hanging out at pubs with my family! So, let’s dive into the real topic at hand today: Mediterranean Barley Stuffed Peppers - an easy Meatless Monday dinner idea! I’ve always been a fan of stuffed peppers, and for this recipe, I wanted to do something different in terms of grains. I usually will use brown rice for stuffed peppers, but this time I decided to try barley instead and loved it. I like to make ... [Read More]
Easy Mediterranean Flatbread Pizza
Hey, hey! How was your weekend? Mine was a good one that was full of sports! My husband and I went to the Farmers Insurance Open at Torrey Pines, which was neat. I'm not a huge golf person but find sporting events of pretty much any kind fun - plus it was my first time at the Torrey Pines golf course, and the views were beautiful as expected! I also watched a lot of tennis, as the Australian Open came to a close. Watching the Williams sisters compete against each other in the finals was inspiring - I mean, they are such badass female athletes! - so on Sunday my hubby and I headed to the tennis courts nearby to get in a workout together. We're not technically all that great at tennis, but we have fun and get some exercise, so that's all I really care ... [Read More]
Hearty Farro Greek Salad
This dish takes a twist on a classic Greek salad with the addition of hearty farro! After lots of holiday cookie baking and eating, it seems like a good time to focus more on greens, what do you think? You guys, I haven't shared a salad recipe in way too long. I swear, I eat salad all the time - apparently I just don't get creative and come up with new salad recipes too often. But today salad is making a comeback on Foodie Loves Fitness, and I promise you that this is one delicious meal idea! One of my favorite healthy strategies when eating out is to order a salad as an appetizer. It takes the edge off of my hunger, and I wind up eating less of my entree (which is bound to be something heavier) and taking some home as lefties. When it comes to at-home salad ... [Read More]
