Hope your week is off to a good start! My Monday consisted of getting work done, heading to the dog beach with Adam and Harley, and getting a workout in. After being sore all weekend from my gym session on Friday, I was happy to not feel so achy today and headed to the gym for what turned out to be a great workout. I felt fabulous afterwards. :) Last Saturday, Adam and I had a laid back night hanging out at home. I think I've found a new favorite way to eat portobello mushrooms: As soon as I whipped up this panini, before I even tasted it, I knew I'd love it. I definitely will be making this deliciousness again very soon! Balsamic Portobello & Goat Cheese Panini Serves 2 Ingredients: 2 panini rolls (Trader Joe's) 2 large portobello mushroom caps 2 vine ripe tomatoes, sliced 2 oz creamy goat cheese 1/2 c balsamic vinegar 1 TBSP light brown sugar 1/2 TBSP soy sauce 1/4 onion 1 TSP olive oil Sea salt In a large saucepan, bring the balsamic vinegar, light brown sugar, and soy sauce to a boil. Earlier I felt like creating a healthy meal that looked fun & fancy, and this is what I came up with - isn't it pretty?! Stacked Apple, Goat Cheese & Pecan Salad What you need: 1 apple 1 oz goat cheese 2 TBSP chopped pecans, toasted 6 pitted dates, sliced 1 celery stalk 1/2 TBSP honey 1/2 TBSP apple cider vinegar 1 TSP lemon juice sea salt Thinly slice the apple and celery stalk. Begin to form layers - first placing the apple, then topping it with some goat cheese, pecans, dates, and celery slices. This afternoon I was already in the mood for pasta when I stepped outside and got a whiff from my basil plant. And then, I wanted pasta with fresh basil, so that's exactly what I whipped up. This dish is easy, fresh and delicious. [Side note: This was my first time eating basil from my plant, yea!
