I often like to start off my days with some movement. Sometimes it's just a few yoga poses (I talked about my favorite ones here), other times I take Harley for a nice long walk. And then there are days when I like to get sweaty first thing in the morning. Today was one of those days, so I did the following easy breezy workout. Ever have one of those evenings where you're just not feeling dinner? No "dinner" food sounded appealing to me tonight, and I wanted something cold, so I made a new yummy smoothie combo. Post-workout, this smoothie is great because it packs a good amount of protein, 2 servings of fruit, and fulfills the following amounts of daily vitamin recommendations: 15% Vitamin A, 115% of Vitamin C, 72% Calcium, and 13% iron. Nutty Veggie Quinoa
If that's true, then my fat cried a river this evening! My boxing class had me literally dripping sweat. It was totally gross, yet awesome! This afternoon I realized that while my diet yesterday included a bunch of fruit, the only veggie I had eaten was a few tablespoons of hummus. I decided to quickly remedy my lack of veggie intake and throw together a lunch using the zucchini and bell pepper I had on hand. The pine nuts add a bit of crunch to the dish, and the parmesan really gives plain quinoa a lot of flavor.
