Most people have certain foods they eat all the time. Though I like to change up my eats, I definitely have some staple foods that I don't get sick of - including bananas, protein bars, berries, peanut butter, almonds, apples and yogurt. I usually eat a yogurt a day, and a lot of the time they're Greek. When it comes to Greek yogurt, Chobani is by far my favorite brand. A couple of weeks ago, I got excited when I saw a package at my door, because the lovely people at Chobani sent me two of their new flavors to try! I already had a bunch of Chobani yogurts, so this package really stocked up my fridge with their Greek yogurt goodness. I've been sampling their new pear and banana flavors, and not surprisingly, they're pretty tasty. I love banana in general, so that flavor is ... [Read More]

Blueberry, Banana -n- Oats Pancakes
At the beginning of each new year, I constantly find myself entertaining thoughts of ''firsts." Yesterday was my first hike of 2013 (and Adam and Harley's too!). Now that I'm getting over this energy zapping cold (WOOHOO!!), today I had my first gym session of the year. And a few days ago, I whipped up my first pancake recipe of 2013: These pancakes are full of goodness -- blueberries high in antioxidants, bananas loaded with potassium, and fiber-full oats. I topped them with a bit of drizzled honey, which added the perfect touch to these fluffy pancakes. Blueberry, Banana -n- Oats Pancakes 1/2 cup old fashioned oats1/2 cup fresh blueberries1/2 medium banana3/4 cup unsweetened almond milk1/4 cup all-purpose flour1/2 TBSP baking powderA sprinkle of salt Puree ... Healthy Snack Alert: Strawberry Banana Chiller
Now that Thanksgiving is under wraps, I feel like it's officially the holiday season. Yesterday I got into the spirit of things by decking out my apartment with Christmas decor, which always feels like an automatic mood enhancer to me. Something about the holiday season in general puts me in such festive spirits. And how can you not enjoy your kitchen table being covered in sparkly red and silver place mats? Speaking of the holiday season, we all know that December is packed with tempting food situations for us to constantly splurge on, from delicious looking Christmas cookies and eggnog at holiday parties, to fast food when we're on the run. I think that everyone should enjoy treats, but it's important to not completely give up on eating healthily just because 'tis the season to be ... [Read More]
Pumpkin Pecan Banana Bread
Earlier today, my father-in-law flew into San Diego to visit my hubby and me for a long weekend. Whenever loved ones come into town, I have a fun time making goodies in the kitchen. My signature drink to make when I have guests is sangria, while I like to mix up my homemade meals and treats. Last night, this is what I whipped up in preparation for his arrival: Holy pumpkin, this bread is delicious! I've adapted this vegan recipe from the Skinny Bitch cookbook, and it comes up insanely moist and delicious. Pumpkin Pecan Banana Bread Makes 10 servings Ingredients: 2 cups all purpose flour (I usually do 1 cup of whole wheat flour, 1 cup of white) 1 large ripe banana, mashed 1 1/2 c pure pumpkin 1/2 c canola oil 1/2 c almond milk 1 c evaporated cane ... Banana Peanut Butter Pancakes
First thing this morning, Harley and I ventured out for a long walk around our neighborhood trail. As my stomach growled, I started to think about breakfast. Most days, I eat Greek yogurt with fruit, cereal with protein powder and fruit, or a smoothie for breakfast. But every couple of weeks, I get a craving for pancakes. Today was one of those days, and as we got some exercise in, I concocted a breakfast recipe in my head. Despite my love for pancakes, you won't find pancake mix in my kitchen cabinets. I've become accustomed to mixing a bunch of ingredients together to make up my own recipe when I have pancake yen. Here is today's creation: These light and fluffy banana pancakes have a subtle hint of peanut butter, and are the perfect portion to serve breakfast for one. I used ... [Read More]
Banana PB & Jelly Muffins
Late last night I decided I was in the mood for making muffins. I resisted the urge to bake right before I went to sleep, but may or may not have been deciding what kind of muffins to make and concocting a recipe while laying in bed. My requirements were that they came out yummy and moist, yet under 200 calories a piece. First thing this AM before beginning work, I whipped up these babies: Banana PB & Jelly Muffins Makes 12 Ingredients: 1 c whole wheat flour 1/2 c all purpose flour 1 1/2 ripe bananas, mashed 1/4 c brown sugar 1/2 c peanut butter 1 c (soy) milk 3 TBSP (light) butter 1/4 c fruit preserves (I used raspberry) 2 TBSP baking powder Preheat the oven to 350. Line a 12-cup muffin tin with muffin cups. In a saucepan, combine the butter, peanut butter, and sugar ... [Read More]
