These flavorful truffle fries require just a handful of ingredients, and they're baked instead of fried for a healthier side dish. Pair them with my easy lime Greek yogurt sauce for dipping! If you adore a side of crispy, flavorful fries, I’ve got good news: They’re not hard to make at home yourself. And there’s no need to cook your fries in loads of oil or buy a deep fryer. Baking versus deep frying your spuds leaves out the empty calories, and your fries will turn out crispy and delicious if you follow my truffle fries recipe below! Baked Truffle Fries I take these fries up a notch with the addition of truffle oil, grated parmesan cheese, chives, a sprinkle of truffle salt, and a lime Greek yogurt sauce for dipping. Making the Greek yogurt dipping sauce is optional – an aioli ... [Read More]

Quinoa Veggie Burger Sliders with Lemon Tahini Sauce {vegan}
These healthy veggie burger sliders are made with nutritious ingredients like quinoa, baby spinach, carrot and red onion. They make for a great party appetizer that you can feel good about eating! Did any of you watch the College National Championship between Alabama and Clemson's talented football teams? Chances are that you were just as surprised as I was - along with all of the betting sites - at the way Clemson kicked Alabama's butt. That's why I love football: You never know what's going to happen! My football coaching dad had a player at his high school that went on to play really well at Bama. He left as a junior last year and got drafted to the Dolphins (where he's been playing great), so I couldn't help but think how perfect it was that he left after Bama won the ... [Read More]
Herbed Pomegranate Goat Cheese Crostini
Have you been getting a chance to soak up all of the in-season produce yet this autumn? Lately my cooking and baking has been limited because I moved cross country, and then I was staying in an Airbnb without a legit kitchen for over a month. Plus, I've been pre-occupied with trying to find a new home in Connecticut... BUT I have news to share! After much time and effort spent into looking to buy a place here, my husband and I decided to put our buying plans on hold and to rent a townhouse for 6 months. This move has been incredibly stressful, and sometimes when nothing is going according to plan, you have to recalibrate. We moved into the townhouse last weekend, and I will be spending the next couple of days unpacking and getting settled in... and I am so excited to have all of ... [Read More]
Vegan Cinnamon Sugar Pretzel Pillows with Cream Cheese Dipping Sauce
It's September... which means it's the start of football season... which obviously means I'm thinking about football food! I love the start of football season. I feel like by the end the season, I'm a little sad but also usually ready for it to end - ready to have my full weekends back to do other things. But then when August rolls around, I start to get excited again for football. Football season means Sunday and Monday nights filled with NFL football. It means catching college games at sports bars. This year, now that I'll be living in the northeast, it means going to a few of my dad's team's high school football games in Jersey. And for the last several years, it's also meant Fantasy Football fun. Last week I had my Fantasy Football draft during my cross country trip ... [Read More]
Avocado Pistachio Pesto & Tomato Crostini [vegan]
One of my favorite things to do in the summertime is hang out in my backyard in the evening with my husband, while we listen to relaxing music coming through my patio speakers with glasses of refreshing white wine in hand, while munching on an easy appetizer dinner and laughing at our pup running around chasing her ball like a nut. With temperatures steadily in the 80s and the sun blaring strong every day in the San Diego area for quite awhile, my house has been on the warmer side lately - which means I don't necessarily feel like turning on my oven or sweating over my stovetop to make dinner... or putting all that much effort into meal prep for that matter. We've thought about getting air conditioning, but just when I'm over feeling hot in my house and want to see about getting ... [Read More]
Tomato, Artichoke & Spinach Pizza Bites
Hello! Whew, it's been a busy week - so busy that I didn't get to do my usual Wednesday blog post yesterday. I've been pretty consistent with a Monday/Wednesday/Friday schedule for awhile, and it's rare that I'm here on a Thursday...well hi friends! So shall we hop right into the topic at hand? Delicious food, of course. Last year I planted an herb and veggie garden, and out of everything, my tomato plant has flourished the most. It's a total hog that has crowded the rest of my raised garden bed, and at some point last summer it overtook the zucchini plant next to it. As it grows and spreads out of control, we continue tying it to new wooden sticks to hold its different ever-growing branches upright. Certainly no complaints here though, because it's been producing lots of ... [Read More]
