Valentine’s Day is upon us! I love whipping up treats that I can feel good about eating any day of the year, but the holiday of love gives me even more of a reason to do so.
And what screams Valentine’s Day more than desserty strawberries?
Chocolate Cheesecake Stuffed Strawberries
This Valentine’s Day dessert requires just five easy ingredients and 10 minutes to make. All you need is a pound of strawberries, cream cheese (I use low fat), powdered sugar, vanilla extract and mini chocolate chips. I like to use a mixer to blend up the cheesecake mixture to get it nice and fluffy, but if you don’t have one on hand (or are just feeling lazy about breaking out the mixer, I get it!) you can simply mix with a whisk.
At 30 calories a strawberries, this is a Valentine’s Day dessert that’s easy on the waistline but big on flavor. If you like cheesecake and strawberries, this recipe is sure to be a big hit!
The Recipe
Chocolate Cheesecake Stuffed Strawberries
Ingredients
- 1 lb strawberries
- 1/3 cup (low fat) cream cheese
- 2 TBSP powdered sugar
- 2 TSP vanilla extract
- 2 TBSP mini chocolate chips
Instructions
- Rinse the strawberries and slice the stems off, then hollow them out using a paring knife.
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until creamy.
- Using a butter knife, fill the strawberries with the cheesecake mixture.
- Roll the bottoms of the berries in the mini chocolate chips.
- Refrigerate until serving.
