Have your cake and eat it too with this healthy snack cake recipe. You only need a handful of ingredients to make it, which you probably already have on hand in your kitchen.
This healthy snack cake recipe was born out of a quirky celebration in my house: my dog Harley’s 13th birthday last fall. While I usually commemorate the occasion with a pet store-bought treat, last year I decided to whip up a cake that both my dog and humans would eat and enjoy. My 4-year old was beyond excited to celebrate her “puppy sister’s” birthday and bake the cake together, and it turned out quite tasty!
While I’ve switched up the recipe a bit from Harley’s birthday cake, I let her taste test the recipe I’m featuring today and can confirm that she still loves it (Shocker!).
The main components of this healthy snack cake recipe are: oats as our flour base; banana, apple sauce, and honey/maple syrup to give it sweetness; and cashew butter, an egg, and a bit of avocado oil to make it perfectly moist. We leave out the dairy and heavy binders to create a light cake you can enjoy anytime of the day!
Since it’s currently the month of February, I added a Valentine’s Day twist to this healthy snack cake by baking it in a heart shaped pan and topping it with a simple icing drizzle plus red, white and pink sprinkles. It can really be customized for any time of year.
The topping options are limitless: 1.) yogurt and fresh fruit, 2.) shredded coconut, and 3.) a simple peanut butter frosting (which is what we topped the cake with for my dog’s birthday). Whatever your heart desires!
Truly, this snack cake is delicious anytime and any day of the year!
Healthy Snack Cake Recipe
Banana Oat Healthy Snack Cake Recipe
Ingredients
- 1 cup dry old fashioned oats
- 1 egg
- 1 ripe banana broken into a couple chunks
- 1/3 cup unsweetened apple sauce
- 1/4 cup cashew butter
- 1/4 cup honey or maple syrup
- 2 TBSP avocado oil
- 1/2 TSP baking soda
- Pinch salt
Topping Ideas
- Easy Frosting Drizzle Whisk 1/4 cup powdered sugar with 1.5 TSP of almond milk
- Yogurt & fresh fruit
- Mini chocolate chips
- Shredded coconut
Instructions
- In a food processor, process the oats until it forms a mostly ground flour.
- Add in all of the remaining cake ingredients. Process until well combined and mostly smooth.
- Pour into an 8" round, square or heart pan coated with cooking oil.
- Bake at 350 degrees for 25-30 minutes, until it passes the toothpick test.
- Allow the cake to cool before adding your choice of toppings.
