I love going apple picking. It’s an annual tradition in my family to embark on an apple picking afternoon, then come home and whip up some delicious apple recipes in the kitchen.
Healthy Almond Butter Caramel Apple Slices
Today’s seasonal recipe is a more nutritious take on caramel apples. It’s a fun recipe to make with kids. It’s crazy easy to whip up, and kids can get creative with whatever toppings their hearts desire – from sprinkles and chocolate chips, to shredded coconut and crushed peanuts.
To make the caramel sauce, we skip all of the butter, cream, and sugar that is typically used. Instead, this dairy free healthy apple recipe uses creamy almond butter, maple syrup or honey, and lite coconut milk to whip up a better-for-you caramel.
Any type of apples can be used with this healthy apple recipe. And whether you peel the apple or not is up to you. Skins on means more nutritious fruit fiber, but we prefer them peeled because I have a 4-year old who usually spits out the skins.
The recipe drizzles the caramel sauce on top of apple slices, but you can also opt to make the caramel a dipping sauce for apples – and other kinds of fruit, such as banana, grapes or blueberries.
The Recipe
5-Ingredient Healthy Almond Butter Caramel Apple Slices
Ingredients
- 1/2 cup creamy almond butter
- 1/3 cup maple syrup or honey
- 2 TBSP lite coconut milk
- 1 TSP vanilla extract
- 4 medium apples or 5 small apples
- Toppings of choice, such as sprinkles, mini chocolate chips, or chopped pistachios
Instructions
- Slice the apples (peeling is optional), and place them on a plate or serving dish.
- Combine the almond butter, honey/maple syrup, vanilla, and coconut milk in a saucepan over low heat. Whisk often as the mixture becomes smooth and melty.
- Drizzle the caramel sauce onto the apple slices. Sprinkle your favorite toppings over the apples, such as sprinkles, mini chocolate chips, shredded coconut or chopped nuts.
- Enjoy immediately! Store any leftover caramel in the fridge, and heat it up when ready to use again.
