These flavorful truffle fries require just a handful of ingredients, and they’re baked instead of fried for a healthier side dish. Pair them with my easy lime Greek yogurt sauce for dipping!Â
If you adore a side of crispy, flavorful fries, I’ve got good news: They’re not hard to make at home yourself. And there’s no need to cook your fries in loads of oil or buy a deep fryer. Baking versus deep frying your spuds leaves out the empty calories, and your fries will turn out crispy and delicious if you follow my truffle fries recipe below!
Baked Truffle Fries
I take these fries up a notch with the addition of truffle oil, grated parmesan cheese, chives, a sprinkle of truffle salt, and a lime Greek yogurt sauce for dipping. Making the Greek yogurt dipping sauce is optional – an aioli or your standard ketchup also pair well – but I love how it helps give this truffle fries recipe a protein boost. In fact, there’s 8 grams of protein in a serving!
This truffle fries recipe is great to pair with a summery burger night or to use as an appetizer, and I especially love to make them during football season as a game day snack. It’s only June, but I’m already thinking about football season starting in August! (Anyone else?)
The Recipe
A few things to note:
- Want crispy fries? Don’t skip step #2 below, which calls for soaking the potatoes before baking. This removes excess potato starch and helps us get that delicious crispiness.
- For the parmesan cheese: You can opt for the store-bought kind, but I think freshly shredded parm gives the dish an added flavor oomph. You can also leave out the cheese or use a plant-based cheese and yogurt to make this dish vegan.
- Truffle oil is best used as a finishing oil – which means a dish should be topped with it at the end for added flavor. Cook with it and most of that truffle flavor will get lost, which is why we drizzle the baked fries with the oil at the end just before serving.
Baked Crispy Truffle Fries With Lime Greek Yogurt Dipping Sauce
Ingredients
- 4 Russet potatoes (around 900g total)
- 1 tbsp avocado oil
- 2 tsp freeze dried chives or 2 TBSP fresh chives
- 1 tsp fine sea salt
- 1/2 tsp ground pepper
- 1/2 tsp garlic powder
- 2 tbsp truffle oil
- 3 tbsp shredded or grated parmesan cheese
- 1/2 tsp truffle salt
For the lime Greek yogurt dipping sauce (optional):
- 1/2 cup plain Greek yogurt
- Juice from 1 medium lime
- 1/4 tsp garlic salt
- 1/2 tsp freeze dried chives or 1/2 TBSP fresh chives
Instructions
- Wash and peel the potatoes, then cut them vertically into thin fry slices.
- Place the sliced potatoes in a bowl of cold water and let them sit for 30 minutes.
- A few minutes before the potatoes are done sitting, preheat your oven to 425 degrees. Coat a large baking sheet with cooking spray.
- Remove the potatoes from the water and blot them dry with paper towels or a dish towel. Transfer to a mixing bowl.
- Drizzle in the avocado oil and sprinkle in the chives, sea salt and pepper. Toss to combine evenly, then transfer the potatoes to the baking sheet.
- Bake for 15 minutes. Toss, then back another 10-15 minutes until the fries are at their desired crispiness.
- (Optional) While the fries are baking, whip up the dipping sauce: Place the Greek yogurt in a small bowl. Add in the lime juice, garlic salt, and chives, and mix to combine well.
- Once the fries are done cooking, remove from the oven and toss with the truffle oil, truffle salt and parmesan cheese.
- Serve and enjoy!
