This healthy strawberry watermelon popsicle recipe is a refreshing summer snack that requires only 5 ingredients! Vegan + gluten free.
We’ve been popsicle obsessed in my household this summer. I mean, what better way to cool off than with a frozen fruity treat, am I right?
Another thing we’ve had on repeat in my kitchen is watermelon. It may be my toddler’s favorite fruit, so I’m always cutting one up for us to bring on beach or park outings.
Strawberry Watermelon Popsicle Recipe
Today’s popsicle recipe combines our two obsessions to make one refreshing & healthy snack! This week also happens to mark National Watermelon Day (8/3), so these strawberry watermelon popsicles are perfect timing to celebrate this random food holiday in the thick of summer.
And the best part? You only need 5 ingredients: watermelon, strawberries, light coconut milk, lemon and maple syrup.
To whip these up, we use a high powered blender or food processor, + a popsicle mold of course. We simply mix up all of the ingredients, then pour the delicious mixture into the popsicle mold.

5-Ingredient Strawberry Watermelon Popsicles
Ingredients
- 1 cup watermelon
- 1 cup fresh or frozen strawberries
- 2/3 cup light coconut milk
- 1 medium lemon
- 2 TBSP maple syrup
Instructions
- Combine all ingredients in a food processor or high-powered blender. Blend until the mixture is smooth.
- Evenly pour the popsicle mixture into your 6-serving popsicle mold. Insert popsicle sticks and freeze until hard, at least 4 hours.
- To unmold the popsicles, simply run the mold under warm water for a few seconds. Wiggle the popsicles around, and they should easily pop out. Enjoy!
