Happy springtime friends! I’m so happy to be enjoying moderate temperatures as of late. When I lived on the west coast I used to think my east coast family was crazy when they’d say that 50 degrees felt so nice and warm after wintertime, but now I couldn’t agree more. It’s glorious to be able to go for walks after dinner (the one perk of Daylight Savings!), play in the backyard with my toddler without freezing, and lounge on my (newly dug out of my basement) hammock.
With all of that being said, I’m excited for many wonderful fruits and veggies to be in peak season soon now that spring is underway. I love perusing local farmers markets, which look kind of sparse in New England in the wintertime, and can’t wait to dig into containers of local sweet berries!
10 Healthy Spring Recipes
To kick off the season, today I’m sharing a round up of healthy recipes that are perfect for springtime. From asparagus and radishes to strawberries and blueberries, these seasonal recipes are serious on flavor while still being healthy!
#1 – Creamy Spring Veggie Soup
Featuring an asparagus coconut milk puree, seasonal radishes, lemon and leek, cannellini beans, and elbow pasta, this hearty spring soup is one of my favorite things to make this time of year. Get the creamy spring veggie soup recipe here. {vegan}
#2 – Strawberry Crumble Pie
Pie ready in an hour flat from start to finish? Yes please! I created this pie recipe last summer and can’t wait to make it this year. This vegan strawberry crumble pie is bursting with fresh strawberries and features an oat crumble topping. It’s also easy to whip up because the recipe skips the steps of making a homemade pie shell and instead uses a pre-made one.
Strawberries are mostly grown in California and Florida, where peak season is April through June. I loved going strawberry picking in CT last year, and definitely want to do some kind of berry picking again in June when it’s peak season here.

#3 – Spring Veggie & Fontina Quiche
Asparagus is one of the most popular spring veggies, and it’s packed into this quiche recipe, which also features zucchini and cherry tomatoes.
#4 – Arugula Pesto Pasta Tomato & Zucchini
Arugula is a cool weather crop that doesn’t love the heat, making wild arugula peak in spring and fall. And you know what’s great to make with arugula? Pesto!
My arugula pesto pasta recipe is made with summery zucchini and tomatoes, but it really is great on its own or with whatever veggies you have on hand (perhaps seasonal asparagus, artichokes or peas!).
#5 – Strawberry Oat Banana Bread

#6 – Potato Leek Soup with Zucchini & Pasta
Leeks are such an interesting veggie. It’s a more mild onion that works great in soups! This soup recipe features potatoes, leeks, zucchini and pasta for added heartiness. {vegan}
#7 – Lemon Goat Cheese Pasta with Asparagus
Pasta night is one of my favorite kinds of dinner! This springtime pasta dish comes together in 30 minutes flat and features fresh lemon, asparagus and goat cheese.

#8 – Cherry Blueberry Cobbler
North American blueberries are in season from April through September. Cherry season here is also spring and summer – California cherry season starts in May – and I like to take advantage by whipping up some berry treats throughout the spring and summer!

Ah, this is a great collection of new ideas, Nicole! The creamy spring soup is really calling my name, and I’m intrigued by the coconut milk asparagus puree. I’m normally not a huge asparagus fan, but I always love getting a couple bunches of asparagus around this time of the year – now I need to try it in this soup!
