Hi friends! How's social distancing life going? I know that for many of you, it's been an adjustment being home all day long with the coronavirus quarantine. Everything being shut down for much of the country means at home or outdoor workouts are your only options if you're trying to keep up with your fitness. Not being able to go to fitness studios has been a bit of a change for me as well. I used to go to baby & me yoga and a Lagree Pilates class on a weekly basis to break up my at home workouts. Nowadays, all of my workouts are in my home gym, and I've been going for long walks with my dog on the daily. How's everyone holding up with quarantined life? Over here in the northeast, we are getting hit pretty hard with coronavirus cases, so my family has been mostly isolating ourselves from the world for a bit now. We know people who are waiting for test results. Someone at my husband's work tested positive. This whole situations feels very surreal. But we're all in this together, and my hubby and I are trying to limit our exposure to do our part in reducing the spread of the virus. Highlights from Our First Vacation As a Family of 3 {San Diego, CA}
Anyone that knows me knows that traveling is a passion of mine. Exploring new places - whether a getaway that's a 2 hour drive away or a big trip that's a 15 hour plane ride away - always has a way of reinvigorating me and making me feel more alive. In becoming a mother, I've felt this strong sense to keep doing the things that I enjoy - many of the things that make me, me. Chocolate Banana Oat Waffles {vegan + gf}
Are you more of a waffle or pancake person? I tend to go for pancakes - I make my oatmeal protein pancakes at least once a week - but every now and then I get in the mood for waffles. Today's chocolate banana oat waffle recipe was born out of my latest waffle craving. I didn't have all of the ingredients on hand to make other waffle recipes that I've been wanting to make, so I came up with these healthy waffles instead. This breakfast/brunch beauty is pretty simple to whip up, and it features basic ingredients that I always have on hand. The base of the waffles are made with oat flour, fresh banana and almond milk.
