Hi, friends! It’s been a minute since I’ve shared a recipe with you, but I’m back today with my first blog recipe of 2020.
Say hello to this chocolate cashew butter fruit dip!
This dip is easy to whip up, requires only 6 ingredients, and is a decadent but healthy way to satisfy your sweet tooth. Pair it with your favorite fruits, like berries, banana, pineapple and apple.
The base of this dip is homemade cashew butter, which is easy peasy to whip up. All you need are salted & roasted cashews – you could use raw cashews, but I love a bit of the sweet + salty contrast, and I also like the roasted flavor – a bit of coconut oil, and a high-powered food processor.
The key to getting this cashew butter right? Just keep processing!
The cashews will first get chopped up in tiny bits, but as you keep on processing, the mixture will become smooth and turn into cashew butter. Silky, easy & yummy – oh yes.
The other ingredients then get added into the mix. We’ve got maple syrup, chopped dark chocolate, cocoa powder and almond milk.. and that’s all she wrote for this vegan fruit dip!
I’m always looking for healthy-ish desserts to make for events and holidays, and I know I’m not alone. So I figured the timing of this fruit dip recipe is perfect with the Super Bowl and Valentine’s Day taking place next month. But really, this fruit dip makes for a great dessert any night of any week. I hope that you give it a try!
Chocolate Cashew Butter Fruit Dip {vegan}
Ingredients
- 1 cup roasted & salted cashews
- 1/4 cup pure maple syrup
- 1/4 cup almond milk
- 1/4 cup chopped dark chocolate plus more for sprinkling on top of dip
- 2 TSP coconut oil melted
- 2 TBSP cocoa powder
Instructions
- First, make the cashew butter by placing the cashews in a high-powered food processor. Process until the cashews turn into chopped little pieces.
- Add in the melted coconut oil and scrape the cashews down from the sides of the processor. Process again until the cashews form a smooth, cashew buttery consistency. This will take a few minutes.
- Add in the maple syrup, cocoa powder, almond milk and chopped chocolate. Process until evenly combined.
- Pour the dip into a bowl, sprinkle extra dark chocolate on top, and enjoy it with fresh fruit. (This dip also is a great smoothie or pancake topper!)
