October is in full swing, and I’m enjoying the leaves changing so much! I’m hoping to take advantage of the mild weather and pretty leaves some more this weekend with a family hike.
Not surprisingly, I’ve been loving all things pumpkin and apple this fall. And while my apples that I picked at the orchard are long gone, I bought a big bag of locally grown apples at the store that I’ve been playing around with. Today’s recipe is a healthy, delicious fall treat: baked apples with an oat streusel + maple butter sauce.
This recipe is like a deconstructed apple pie: We’ve got apples. We’ve got cinnamon yumminess. We’ve got a healthy caramel-like sauce. We’ve got a buttery topping…
…yet it’s also made with wholesome ingredients like oats, almond flour and coconut oil! The recipe is also vegan + gluten free to boot.
I also love that these baked apples are kind of fancy, yet they aren’t hard to whip up. You can enjoy them on their own or pair them with ice cream for a little something extra. I hope that you give my recipe a try!
Baked Apples with an Oat Streusel & Maple Butter Sauce {vegan + gf}
Ingredients
- 4 medium apples that bake well such as Honeycrisp or Fuji
- 1/2 cup dry oats I use old fashioned
- 1/4 cup almond flour
- 1/4 cup coconut or brown sugar
- 3 TBSP coconut oil
- 1/2 TSP cinnamon
- Pinch of salt
For the maple butter sauce:
- 1/4 cup pure maple syrup
- 3 TBSP creamy almond butter you want it to be a drippy one
- 1 TSP cinnamon
- 1/2 TSP vanilla extract
Instructions
- Preheat oven to 375 degrees. Coat a baking dish that will easily fit 8 apple halves with cooking spray.
- Melt the coconut oil in the microwave or in a saucepan, then set aside to let it slightly cool.
- Cut the apples in half vertically, then remove the stems and seeds. Use a spoon to make a small well in the middle of the fruit halves. Place the apples in the baking dish.
- Make the maple butter sauce in a saucepan: Combine the maple syrup, almond butter, cinnamon and vanilla over low heat. Stir continuously until it forms a smooth mixture.
- Spoon half of the maple butter sauce into the apple wells. Set aside the rest.
- In a mixing bowl, combine the oats, almond flour, coconut/brown sugar, cinnamon and salt. Add in the coconut oil and stir until evenly combined. Spoon the oat mixture into the apple halves.
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil, and bake for another 10 minutes, or until the apples are tender and gooey.
- A few minutes before the apples are done cooking, warm the remaining almond butter mixture in the saucepan. Drizzle over the baked apples and enjoy!
