This healthy dessert recipe is packed with summery fruit and takes 5 minutes to whip up!
You guys, I’m definitely on a 5-ingredient recipe kick! My last recipe share was 5-ingredient Italian croutons, and a few weeks ago I shared a post on how-to make oat milk, which, while it takes a few more minutes of hands-on time than today’s recipe, also involves just 5 ingredients.
I’ve had a thing for sorbet for months now, and I’ve also had a thing for all fruit, but particularly mango, since the start of my pregnancy. This began when I found myself buying overpriced pre-sliced mango at Whole Foods Market on a day back in January in the midst of a crazy cold front when the high temperature for the day was 15 degrees. I kid you not!
This recipe was born out of a desire to enjoy a fruity, healthy dessert one night when I had zero ice pops or pints left in my freezer. It seems appropriate to share now that it’s all summery here in the northern hemisphere (and not a shivering 15 degrees!). The 5 wholesome ingredients you need to whip up this sorbet are frozen mango and strawberries, fresh lime, agave nectar and almond milk (or any kind of milk for that matter).
The one must-have kitchen tool needed for this recipe is one of the gadgets I’d have a hard time living without: a food processor (a Vitamix would work too). This magical machine turns frozen fruit into a creamy sorbet in minutes!
Once you blend the ingredients together and it forms a smooth consistency, you can either spoon the sorbet into bowls to enjoy right then, or you can opt to transfer the mixture to the freezer to let it harden up for a bit. I like to whip this up during the day, throw it in the freezer, and take it out at night around 15 minutes before I want to eat it.
Easy Strawberry Mango Sorbet {vegan + gf}
Ingredients
- 2 cups frozen mango
- 1 cup frozen strawberries
- 1/4 cup almond milk
- 2 TBSP agave nectar
- Juice from 1/2 medium lime
Instructions
- Place all ingredients in a high-powered food processor.
- Pulse for 30 seconds. Pause the processor and scrape down the sides of the mixture.
- Pulse again until it becomes smooth with a sorbet consistency. You may need to scrape down the mixture once more.
- Enjoy right away, or transfer the sorbet to a loaf pan, bowl or container. Place in the freezer to thicken the consistency up until you're ready to eat.
