No shocker here, but I’m still obsessed with all things cinnamon, so today I have a delicious cinnamony snack/breakfast/dessert recipe to share!
Lately cinnamon rolls and breads have been calling me. I ordered a gooey cinnamon roll a month or so ago while working at a coffee shop to satisfy my craving, but it’s stuck around. So what did I do my friends? Came up with a healthier version of cinnamon roll bread, of course!
This bread is a more nutritious play on the typical white flour, butter, and refined sugar-filled cinnamon swirl breads we all know and love.
Instead, we’ve got an oat + whole wheat flour base. Apple sauce, a flaxseed egg, and coconut oil are added into the mix in place of butter, eggs and vegetable oil. Instead of an excess of sugar, pure maple syrup is used in the bread dough, and 1/4 cup of brown sugar is used in the top cinnamony layer.
Oh yes, that cinnamon layer on top is the best part! It’s the icing on the cake so to speak. I originally was going to do an icing-like glaze on top of the bread, but after trying the bread with the cinnamon layer, I decided that it was a glaze on its own that made the bread sweet enough without going overboard into sugar coma land.
Enjoy a slice all on its own, slather nut butter or butter on top, or toast leftover pieces for a quick snack. If you’re looking for something to bring to Easter brunch this weekend, or to make for a healthy snack in your household, I hope you give this vegan cinnamon bread a try!
Healthy Cinnamon Oat Bread {vegan}
Ingredients
- 1 cup oat flour
- 1 cup whole wheat flour
- 1/2 cup pure maple syrup
- 1/3 cup unsweetened apple sauce
- 1/4 cup + 1 T almond milk divided
- 1/4 cup coconut oil melted
- 1/4 cup brown sugar
- 1 TBSP + 2 TSP cinnamon divided
- 1 flax egg: 1 T ground flaxseed + 3 T water
- 2 TSP vanilla extract
- 1 TSP apple cider vinegar
- 1 TSP baking soda
- 1/2 TSP salt
Instructions
- Preheat oven to 350 degrees. Coat a 9x5 loaf pan with cooking spray.
- Make the flax egg by combining the flax seed and water in a medium mixing bowl. Let it sit for a minute to thicken.
- In a small bow, combine the 1/4 cup almond milk with the apple cider vinegar. Stir briefly and set aside.
- In another mixing bowl, briefly stir the oat and wheat flours, 2 TSP of the cinnamon, salt and baking powder together.
- In the flax egg mixing bowl, stir in the maple syrup, apple sauce, coconut oil and vanilla. Add in the almond milk mixture and stir again.
- Mix the wet ingredients into the dry ingredients just until incorporated. Pour into the loaf pan.
- Make the cinnamon glaze by mixing the remaining 1 T cinnamon, 1 T almond milk and brown sugar together. Pour the cinnamon mixture on top of the bread dough, coating it evenly.
- Bake for 45 minutes, or until the bread passes the toothpick test.
- Let the bread slightly cool before transferring it to a wire rack.
