Merry Christmas to all of you who celebrate it!
I hope that you’re having a wonderful end to your year. I’m popping in to share an easy recipe that’s perfect for wintertime – one that I’ve made at least half a dozen times in the past few months.
Matcha green tea powder is packed with antioxidants, but it can be too green tasting for some people. Hell, I like matcha and I don’t even like it strong! But what I love about this recipe is that it pairs matcha with peppermint extract, and the two blend so well together. Peppermint extract is strong and it kind of mellows out the matcha. In the end, what you’ll taste is a chocolatey, pepperminty drink with a hint of matcha that’s perfect for pepping you up on chilly days.
Since I use unsweetened vanilla almond milk for this recipe, it’s also a low calorie treat. I throw Dandie’s vegan mini marshmallows on top because I love them (not sponsored – I just legit use Dandie’s all the time!), but they’re an optional ingredient in the recipe.
To sweeten the cocoa up, I use a combination of maple syrup and stevia, but you can really customize it to whatever sweetener(s) you choose. I tested out the cocoa with all stevia sweetener and did not like the taste as much, and I also have made this recipe with 2 TBSP of maple syrup and nixed the stevia. You can also use monk fruit, honey, liquid stevia, etc… It’s your call!
Peppermint Matcha Hot Chocolate {vegan}
Ingredients
- 1 cup unsweetened almond milk
- 2 TBSP cocoa powder
- 1/2-1 TSP matcha green tea powder depending on how strong you like your matcha flavor
- 1 TBSP pure maple syrup
- 1-2 g packet of pure stevia sweetener
- 1/4 TSP peppermint extract
- Pinch of salt
- Vegan marshmallows for topping such as Dandie's, optional
Instructions
- Place the almond milk in a small saucepan over medium low heat.
- Whisk in the cocoa powder, matcha, peppermint extra, salt, maple syrup and stevia. Constantly whisk until the mixture is smooth and starts to bubble.
- Pour the hot cocoa in a mug and top with marshmallows if you choose.
