The official first day of summer is coming up in just a few days, and it certainly feels like it here in San Diego. The beaches are packed, traffic seems crazier than usual, and all of a sudden the sun is super strong – SPF 50 for this girl, and I still keep getting more sun than I want to! Does it feel like summer where you are yet?
I’m excited this week because I’m on a vacation countdown. In just a couple days my husband and I are heading to Hawaii for a getaway! We will be staying on Kauai, and I am really looking forward to doing lots of fun outdoor activities on what looks like a magical island.
After we get back, I’m heading to IDEA World Convention + Blogfest, which takes place this year in downtown San Diego. I’ve gone to the fitness conference a bunch of years now, and it’s always an inspiring event filled with awesome networking with fellow health bloggers and fit pros, educational seminars, and new to me workouts.
With the start of summer comes the 4th of July for us Americans, and since I get a kick out of being holiday themed for pretty much every holiday during the year (who else is with me?) today I’m sharing a red, white & blue recipe!
While you may already have your go-to food creations for your holiday BBQs, I feel like we shouldn’t forget about a 4th themed breakfast – a healthy, easy one at that.
These 6-ingredient breakfast tacos can’t really get any easier to whip up: Β Spread some vanilla yogurt on flour tortillas, layer strawberries, blueberries, shredded coconut, and cashew pieces on top, and voila, you’re done! Just fold em up and enjoy.
These breakfast tacos are a fun, easy way to get in the spirit of the 4th – but really, they’re a healthy brunch idea for any weekend with loved ones, or even for busy weekday mornings since they take 5 minutes to make. I also think they’re cute to whip up for kiddos, particularly if you have little chefs that like helping to make meals.
Breakfast tacos are also so easily customizable. If you’re dairy free, use coconut milk yogurt. If you don’t like cashews, use almonds, pecans, walnuts, or whatever else floats your boat. If your kid doesn’t like coconut, leave it out. And if you’re gluten free, use GF tortillas. No strict rules here!

Easy Berry Breakfast Tacos
Ingredients
- 8- 6 " flour tortillas
- 2 cups strawberries
- 1 1/3 cup blueberries
- 2 cups vanilla Greek yogurt use dairy free for a vegan version
- 1 cup cashew pieces
- 1/4 cup shredded coconut
Instructions
- Slice the strawberries.
- Spread 1/4 cup of yogurt onto each tortilla.
- Evenly arrange the strawberries, blueberries, cashew pieces, and shredded coconut on each tortilla on top of the yogurt.
- Enjoy!

What a fun idea! I feel like breakfast gets overlooked too often…especially for the 4th of July. But this is a great way to start the day! Plus, it uses all sorts of fun summer berries. I’d be all over this one for sure. And I bet Robbie would like it, too! Of course, he would probably pick it all apart…but that’s being a kid, right? Hope you guys have fun out in Hawaii!!
