Made with almond meal, cashew butter, dark chocolate chips, and fine sea salt, these cookie dough bites are a guilt-free treat that takes 5 minutes to whip up!
Lately I’ve been craving cookie dough all the time. I’ve been wanting to bake cookies just so that I can eat the dough. Who can relate?
I think it started a month or two ago when my husband and I had a date night in downtown San Diego. We grabbed a bite to eat in Little Italy, strolled around to check out the art walk that was going on, went to a Padres game, and capped off the night by stopping into the new Salt & Straw gourmet ice cream shop.
Just like when we visited the Salt & Straw in Portland, the new shop here was packed, and we waited on a long line to get in. But we were determined to eat their ice cream… A 30 minute line couldn’t hold us back!
I opted for their sea salt caramel + cookie dough ice creams in a cone. I ordered a split scoop, so it wasn’t a ton of each kind. When I bit into a piece of their cookie dough, it was heavenly…. but then, I never wound up with another piece of cookie dough. The madness!
Don’t get me wrong, their ice cream was amazing. It’s made so rich and creamy with bursting flavors, so I will be back at Salt & Straw soon… but man, I was left wanting more cookie dough.
FYI to those who are dairy free, Salt & Straw now has vegan options now as well!
This story is what leads me to today’s recipe. Ever since that night, I seem to be jonesing for cookie dough.
I wound up finding pre-made healthy cookie dough bites at my local Sprouts store a couple weeks ago, but I was kind of disappointed by them. They were super coconutty and not gooey enough… so I did what any food blogger would do, and I came up with a homemade cookie dough recipe myself.
These cookie dough bites are really easy to whip up. All you need is a food processor and eight ingredients, and you pretty much just throw everything in there to blend together. I added in some fine sea salt because I dig the sweet + salty combo. It gives these bites a little something extra.
The result? A sticky, doughy ball of raw cookie dough deliciousness!
Just roll them into balls, and voila, they’re ready to be devoured.
The bites provide a sort of built-in portion control and are a great little dessert… but I can’t make any promises that you won’t eat half of the bites in one sitting!
Salted Cookie Dough Bites {vegan + gf}
Ingredients
- 1 cup almond meal
- 1/4 cup creamy cashew butter
- 1/4 cup brown sugar
- 2 TBSP shredded coconut
- 2 TBSP dark chocolate chips
- 1 TBSP almond milk
- 2 TSP vanilla extract
- 1/4 TSP fine sea salt
Instructions
- Place all ingredients except the chocolate chips in a food processor.
- Process until everything is blended together well and forms a sticky ball of dough.
- Add in the chocolate chips and pulse for just another 10 seconds until the chocolate chips are blended in.
- Remove the dough from the processor and roll into 10 balls. Enjoy!
