Well, autumn is officially here!
I’m getting into the spirit of the season, having broken out cans of pumpkin puree and come up with some autumn recipes for freelance projects in recent weeks. Over the weekend I nabbed some fall decorations, and I’ve been burning an apple candle for days.
If you aren’t quite ready to let go of summer just yet, I thought I’d share some autumn recipe inspiration to get you more excited. Ready for all things pumpkin & apple? Let’s get to it!
Pumpkin banana oat breakfast cookies. I recently created this healthy breakfast cookie recipe for Shape – because who doesn’t want to start their day with wholesome cookies? {vegan + gluten free}
Apple pie banana bread. I came up with this recipe last fall, and have probably baked it a dozen times since then. There’s something about apples baked into a moist, warm banana bread that is just too good! I use oats for a different texture than a typical banana bread, and it also makes the recipe gluten free. {vegan + gf}
Potato black bean soup. ‘Tis the season for soup – well, at least we’re starting to get there. This soup takes a twist on your typical black bean soup with the addition of potatoes, bell pepper and carrots. It also gets a flavor kick from Mexican-inspired ingredients like fresh lime, salsa, cilantro, paprika and red onion. It’s also ready in 30 minutes flat! {vegan + gf}
Chocolate pumpkin spice cereal bars. These 5-ingredient bars are such a yummy snack. Both us adults & kiddos tend to love em! {dairy free – contains honey + gf }
Apple pie smoothie. For a lot of us, the temperatures are still pretty warm. It was in the 90s yesterday in Philly & NJ, and it’s supposed to warm up here in San Diego to the mid-80s all week. This means that it’s still smoothie time! I’ll be making my daily smoothies for the foreseeable future I’m sure, and this apple pie smoothie is a fun way to do smoothies in the autumn. It uses fresh apple, and the inclusion of Greek yogurt adds protein into the mix. {gf}
Fig & apple oat crumble. Last month the folks at California Figs sent me A LOT of fresh figs, and I had fun experimenting with different ways to incorporate figs into recipes. I created this fig & apple oat crumble for Shape, & it’s a fun recipe to try for weekend brunch this season! {dairy free – contains honey}
Pumpkin spice pancakes for 1. Pancakes are my favorite, and I love adding pumpkin to my flapjacks.. so I can’t have an autumn recipe roundup without including these pancakes! {dairy free – contains honey}
Mediterranean feta & lemon hummus dip. To me, September means football season! I love tuning into college football, cheering on the NY Giants, & working out while watching weeknight games. Know what else I love? Making dips for dinner on football nights! This hummus dip is super flavorful & perfect for football season. {gf}
Chocolate chip pumpkin protein smoothie. If you’re a pumpkin fanatic like I am, you incorporate pumpkin into many of your autumn meals. One way you may not have used pumpkin before is in a smoothie. This chocolate chip pumpkin smoothie uses pumpkin puree, frozen banana, and gets its protein from chocolate protein powder & yogurt. {gf}
Veggie mac & cheese ramekins. Did you know that kale grows sweeter leaves in cooler months? This mac & cheese is a yummy, portion-controlled way to use kale, and also incorporates zucchini & yellow squashes so that you’re getting your filling of veggies while also satisfying your craving for cheesy carbs.

That fig and apple crumble sounds amazing! We have such a hard time finding figs here in upstate New York…I have no idea what the deal with that is. My grandparents down in South Carolina had a fig tree in their backyard, and it would always be loaded with figs by the end of the summer. I’ll have to keep an eye out for figs to try that crumble recipe…it sounds awesome! This really is one of my favorite times of the year. Break out the apple candle and fun baking recipes! 🙂

Thank you, David! Oh interesting, figs must not grow in the northeast all that much. If you lived close by, I would have brought you guys a bundle of figs… I had SO MANY!! I hope that you’re enjoying the beginning of fall!

I actually haven’t purchased any pumpkin yet! I did buy a kabocha squash and a spaghetti squash though. I’m so excited for fall!!! Is it ever going to cool off though?

Well, it’s 85 degrees here today haha. BUT it looks like it’ll get down to the high 60s/low 70s next week, & I’m excited for that!

I need to take out my fall decorations! I’ve been holding off since we’ve had some decently warm days (in the 80s) but I need to just do it! And these recipes are making me hungry … especially that Mediterranean hummus dip!!
