When it comes to my eating patterns, I’m definitely more of small meals & snacks kinda girl. I like to eat every 3-4 hours, and feel like my body operates best this way.
If I eat a big meal, my belly feels heavy and too full, but when I eat smaller meals & snacks throughout the day, I feel great. Because of this, I always have lots of snacks around: in my purse, gym bag, car and obviously my pantry. Having healthy snacks around is the key to me not getting hangry!
One of my favorite kind of snacks is energy balls. I like to whip up a batch during the weekend to have on hand throughout the week. But since I get bored easily, I like to switch up my energy bite combos & am constantly coming up with new kinds. My latest energy ball creation are these Blueberry Cashew Energy Bites.
Made with rolled oats, cashew butter, raw cashews, hemp hearts, dried blueberries, and honey, they’re the perfect little snack full of healthy fats, carbs and protein.
{Note: Maple syrup, agave, or brown rice syrup can be substituted for honey to make them vegan.}

Chunky Monkey Protein Bites. Because banana + peanut butter + chocolate = the best combo ever!
Apricot Almond Energy Bites. I like these bites because they’re a bit different: Instead of using dates, the fruit glue that holds these bites together is dried apricots. Other healthy ingredients included are almond butter, oats and hemp hearts.
Chocolate Peanut Butter Date Bites. Similar to the peanut butter oatmeal date bites I’ve shared, one of my favorite bite recipes lately is combining the following 6 ingredients in my food processor:
– 1 cup pitted dates
– 1/3 cup dry oats
– 1/4 cup smooth peanut butter
– 2 TBSP mini dark chocolate chips
– 1 TBSP cocoa powder
– 1/4 TSP cinnamon
Sometimes I add in plant-based protein powder as well.
Chocolate Cake Batter Chia Energy Bites. These balls are made with chocolate protein powder, chia seeds, cashew butter and maple syrup.
Cherry Pistachio Energy Balls. Pistachios are a nut that I like but don’t eat very often, so I enjoy using them for these bites. Plus cherries are one of my favorite dried fruits, and the combination of the two makes for a great combo.

I hear ya, Nicole. Late afternoon snacking is my downfall for sure…but if I’ve got healthy options around, then it usually works out better! I am definitely the same way when it comes to eating habits … if I eat too much in one sitting my stomach never feels great. But smaller meals and snacks I’m good! These energy bites sound sooo good!
