How was your weekend? Mine was a good one that was full of sports!
My husband and I went to the Farmers Insurance Open at Torrey Pines, which was neat. I’m not a huge golf person but find sporting events of pretty much any kind fun – plus it was my first time at the Torrey Pines golf course, and the views were beautiful as expected!
I also watched a lot of tennis, as the Australian Open came to a close. Watching the Williams sisters compete against each other in the finals was inspiring – I mean, they are such badass female athletes! – so on Sunday my hubby and I headed to the tennis courts nearby to get in a workout together. We’re not technically all that great at tennis, but we have fun and get some exercise, so that’s all I really care about.
Besides a weekend full of sports, my weekend was also filled with good food, as per usual. For dinner one night we enjoyed Mediterranean flatbread pizza, and today I’m sharing the recipe with you guys!
These flatbreads are a great healthy recipe idea for this weekend’s Super Bowl – and they’re ready in 20 minutes flat! Since I love to make a bunch of appetizers & finger foods to graze on during the big game, I tend to go for recipes that are easier to whip up. Otherwise, the game’s starting and I’m running around the kitchen like a madwoman trying to finish cooking. Anyone else ever been there on Super Bowl Sunday?
The flatbreads center around Mediterranean diet-centric ingredients like baby arugula, crumbled feta, cherry tomatoes, artichoke hearts, red onion, and olive oil that give these babies a ton of flavor, a nice dose of produce, and a bit of healthy fat without being calorically heavy.
I found the giant flatbreads that I used for this recipe from a local grocery store that I love that sells local products, called Frazier Farms. The flatbreads are via Sadie Rose Baking Co and were awesome! You can really use flatbreads of any brand and size, just make sure to adjust your ingredients accordingly if you use more or less flatbread.
To prepare the Mediterranean flatbreads, you start off by brushing the flatbreads with a bit of olive oil. Use your favorite olive oil; I used a locally made basil-infused one.
Next you halve the cherry tomatoes, mince the red onion, and slice the artichoke hearts, and place them on the flatbreads. Sprinkle the crumbled feta evenly around, and pop them in the oven for about 10 minutes.
Once they’re out of the oven, top the flatbreads with baby arugula, sprinkled a bit of sea salt around, and drizzle balsamic glaze on top. Use a pizza slicer to cut the flatbreads into 12 pieces total.
They make for fun, delicious appetizers for game day, or any other day for that matter!
Arugula, Feta, Artichoke & Tomato Flatbread Pizza
Ingredients
- 10 oz flatbread
- 3 oz / 3/4 cup crumbled feta cheese with Mediterranean herbs
- 1/2 cup cherry tomatoes
- 1/3 cup marinated artichoke hearts
- 2 cups packed baby arugula
- 1/4 cup red onion
- 1/2 TBSP extra virgin olive oil
- Balsamic glaze for drizzling
- Sea salt for sprinkling
Instructions
- Preheat oven to 350 degrees.
- Place flatbreads on a large baking sheet. Brush flatbreads with olive oil.
- Mince red onion, sliced artichoke hearts and halve the cherry tomatoes. Spread evenly on the flatbreads. Sprinkle feta cheese around.
- Bake flatbreads until they're lightly crispy, around 10 minutes.
- Once removed from the oven, top the flatbreads with the baby arugula. Drizzle balsamic glaze and sprinkle sea salt on top.
- Use a pizza cutter to slice the flatbread into 12 pieces. Enjoy!

Those photos! Amazing! So I didn’t watch the Aussie Open this year…but mainly because the times. Weren’t the finals on at something like 3am?? But, yes, the Williams sisters are insane. I mean the very fact that both of them have been so successful for so long is quite a feat. But this flatbread. I love a good flatbread, and the toppings on this one are calling my name! As soon as our rogue arugula starts to grow all over our backyard in the spring, I’ll be picking some to make this flatbread. Haha! 🙂

Yes, the timing of the matches were not ideal for Americans! The network kept showing their Australian Open social media hashtag as being #UpAllNight – haha. But I kept DVRing the tournament and watching it at a normal hour!

These flatbreads!! Gosh you are making me hungry for dinner! haha it sounds like you had a great weekend! We went for a hike for the first time in ages (since my toe surgery) and it was AMAZING. I’m just happy to be able to wear shoes like a normal person again! 🙂
