Hi strangers!
Long time no talk. I’m back in the United States after quite a whirlwind trip to Ireland, where I had such a blast. I will be sharing more about my trip with you soon, but today I want to talk about a few of my favorite recipes of the fleeting summer season.
While a lot of Americans consider Labor Day the end of summer, the season officially ends in two weeks. I’m soaking up the last bit of summer, but I’m also looking forward to some cooler autumn-ish weather and all that comes with it (YAY for football season!). Today I thought I’d share a couple of my top favorite summery recipes. There’s still time to whip up these seasonal dishes, so let’s get to it!
I made this berry banana sorbet at least a few times a week all summer long. I love customizing it with toppings depending on whatever I’m in the mood for, and it’s a great post-workout meal.
These Peaches & Cream Muffins are a great way to use up ripe peaches in the summertime!
As with last summer, I’ve been completely obsessed with this super easy watermelon smoothie recipe that I posted years ago. It’s so refreshing in the summer heat!
Loaded Mediterranean Avocado Toast. One of the types of produce I’m always nabbing, especially in the summer, is an avocado. I put them in salads and Mexican bowls, and routinely mash some for avocado toast. This vegan Mediterranean toast recipe spices up the classic simple avo toast with the addition of a few ingredients, including roasted chickpeas and pine nuts.
This Chocolate Cake Batter Hemp Smoothie is like healthy dessert in a cup. I’m all about protein-packed smoothies for breakfast or lunch in the summer!

Love all of these recipe ideas. We’ve been making a ton of avocado toasts, and using everything imaginable as the base – cauliflower crusts, waffles, etc. I need to try it with chickpeas!

Welcome back! Wait…did you go for the GT game? You do know that I used to work in GT athletics, right? And that’s where I met Laura. (Well, she was in grad school at Tech while I was working…and then I left to go back to grad school at UGA.) 🙂
Anyways…yay for college football being back! I’m loving these recipes…especially that sorbet. It’s still way too hot here, and I could go for a cold dessert treat tonight!

Yes I was at the game! And no I did not know that about you! The reason why I made the trip to Ireland was because my dad is a high school coach and his team was invited to play as an opener to the college game. It seemed like a good excuse for me to visit Ireland and meet my family there! 🙂

Thank you for reminding everyone that summer is not over yet! I get frustrated with the world of media for constantly rushing into the next season every year. Can we please just enjoy the fact that it’s still warm and sunny?
These recipes look like a fabulous way to savor what’s left of it. That avocado toast is everything!

So true! I definitely like enjoying the moment/season we’re in. The media loves to get ahead of itself… Halloween decor is already up in all of the stores, which I think is crazy!

Yum! I want to give the loaded Med toast a try and the berry banana sorbet. I love summer food so much!
