All of us have a few pretty useless talents up our sleeves, and one of mine is knowing the lyrics to about a million songs. I can hear a song once or twice and forever have the words in my vault of a brain. For some reason I’m especially good at remembering lyrics from songs that came out when I was in middle school and high school.
I attribute this partly to my strange but good memory, and partly to my musical abilities thanks to playing the piano from age 4 up.
Do you know when my lyrical memory comes in handy? When I’m driving with my hubby listening to the Pop2K and 90’s stations on Sirius XM radio. They play nonstop music from all of the 90s and 2000s, and it’s nothing short of awesome.
Usually as I rap Ashanti and Ja Rule tunes, A looks at me and shakes his head as he asks, “How the hell do you remember this song from 20 years ago?”
I may be more entertained than he is, but I find it so fun(ny) to jam out to songs that came out when I was just a kid and had no idea what the actual lyrics meant. Music has such a cool way of bringing back the most random of memories.
Enter 112’s “Peaches and Cream.”
The song came out in 2001 when I was in 8th grade. It brings me back to the days of hanging at my grandma’s house in their computer room with my then girlfriends, giggling as we talked to complete strangers in online chatrooms and lied about our ages.
I got away with a lot of teenage shenanigans at my grandma’s growing up, and I don’t think that these girls were the best influences on me. This was also around the time that they persuaded me to call a psychic hotline on my grandma’s landline phone, and we spent an obscene amount of money having our futures “told” – but I digress.
I remember playing “Peaches & Cream” along with songs like, City High’s “What Would You Do” and Usher’s “U Remind Me.” I was more of a late bloomer and I’m pretty sure that these girls understood the meaning of these songs better than I did, but you better believe that I knew all the words.
I swear, I have a point! I’m telling you guys all of this because it’s how I came up with today’s recipe…
A few weeks ago, I was driving in my car, listening to the Pop2K station, and “Peaches & Cream” came on the radio. Besides singing along and smirking at how ridiculously sexual the lyrics are, the song reminded me that I had some ripening peaches in my fruit basket.
Because duh, I’m a foodie and songs with food names make me think of recipe ideas.
A second later, I was all, “I should make healthy peaches & cream muffins!”
And so here we are. The recipe calls for chopped peaches, which are perfectly in-season right now.
The gluten-free flour is made with oats and slivered almonds, the muffins are sweetened with maple syrup (no refined sugar, yay!)…
…and the “cream” part is made of plain Greek yogurt with more cinnamon & maple syrup, which we spoon into the middle of the muffins.
I spread the muffin love & shared a few of these bad boys with my cousin, hubby, and a health coaching client, and they all commented on how tasty they are. At 140 calories + 5 g protein a pop, they make a great healthy snack, and are the perfect way to use up ripe peaches!
Peaches & Cream Muffins [gf]
Ingredients
- 3 medium ripe peaches chopped
- 2 cups dry old fashioned oats
- 1/3 cup raw slivered almonds
- 1/2 cup unsweetened almond milk
- 1/4 cup + 2 TBSP maple syrup
- 6 oz plain Greek yogurt
- 2 TBSP Earth Balance buttery spread melted (regular butter is fine too)
- 1 TSP cinnamon divided
- 1/2 TBSP vanilla
- 1 TSP baking powder
- 1/2 TSP salt
Instructions
- Preheat oven to 350 degrees. Line a 12-cup muffin tin with muffin cups.
- Combine the oats, almonds, 1/2 TSP of the cinnamon and salt in a food processor. Pulse until the mixture is mostly ground. Transfer to a large bowl.
- Add in melted Earth Balance, almond milk, vanilla and 1/4 cup of the maple syrup. Stir to evenly combine. Gently add in the chopped peaches, and stir again.
- Mix together the Greek yogurt, remaining cinnamon (1/2 TSP) and maple syrup (2 TBSP).
- Spoon the batter into the cups, filling only 1/3 of the way. Drop spoonfuls of the yogurt mixture into each cup, then fill the muffin cups up with the remaining batter.
- Bake for 15-20 minutes, or until a toothpick comes out of the muffin clean and the muffin tops are lightly browned.
- Cool slightly on a cooling rack before enjoying.

Oh, I am exactly the same. I can remember the lyrics to practically everything, but then I will forget what I did yesterday haha.

Hahahaha! Peaches & Cream. That is incredible. Talk about a flashback right here! And those Pop 2K and 90’s stations are the best. I seriously love every song that comes on. I’ll sometimes add the 80’s station in the mix there, too…but then again, I’m old. 🙂 I love that Peaches & Cream inspired you to make these muffins. They sound delicious, by the way! And I’d be lying if I said I hadn’t thought about some sort of Ghostbusters inspired recipe. No ideas yet…but stay tuned. For some reason, green slimed muffins just don’t have the same ring as Peaches & Cream Muffins. Hah!
