Happy Hump Day!
We’ve made it through half of the work week, woohoo! I’m a bit antsy this week in anticipation of the holiday weekend. Why? Because I’m heading to Mexico for vacation!

This summer my hubby is turning 30, so I planned a surprise trip to celebrate the occasion. I had to tell him about it a few weeks ago, since he had to take days off of work. I decided to make a Mexican themed dinner – black bean enchiladas – and put some cute clues around hinting that we’re taking a trip south of the border. It was fun and I enjoyed planning out a trip that A was clueless about. 🙂 Now I’m just excited and very much looking forward to lots of relaxation + fun in the sun with A in Cabo San Lucas! Any who, today I’m joining the What I Ate Wednesday party! I’m sharing what a day of eats looked like for me last Saturday, so let’s get to it….
First thing in the morning I practiced some yoga. For breakfast post-workout, I made a strawberry banana protein smoothie bowl topped with blueberries, shredded coconut and a TBSP of Justin’s chocolate hazelnut butter.
After taking Harley for a long walk at the park and doing some work around the house, I worked up an appetite so it was zoodle time! Lunch was spiralized zucchini with marinara sauce, chickpeas, artichoke hearts and a dollop of ricotta. I’ve made this dish a few times lately, and it’s so easy to throw together and a great way to get some veggies in!
A couple of hours later, I snacked on some cantaloupe (loving it lately!), and split a Lenny & Larry’s Complete Cookie with A. I’ve been borderline obsessed with these cookies lately! I love that they’re vegan and non-GMO, and I find them to be filling too – because hello fiber + protein!
The one issue I have with this snack? A serving is 1/2 a cookie, and I find it pretty tough to eat 1/2 of a cookie… even though it’s a pretty big cookie and a whole cookie has too many calories for what I like to eat as a snack. So, sharing with A is one easy way to do it! Once I ask him if he wants to eat some of it, I can’t back down and eat it all myself. 😉
For dinner that evening, we headed to the beach for a picnic. I packed artichoke + spinach hummus, apple slices, cheddar cheese, fresh sesame seed bread, baby carrots & pretzels. I love this kind of dinner!
That night while we were watching a movie, I snacked on some TJ’s freeze dried Fuji apple slices. I love this snack for something sweet & healthy. The bag contains just 130 calories – so it’s also built-in portion control.
So there you have it, a day of my eats – and 1,400 calories worth of food. You can get a lot of bang for your buck when you’re eating lots of nutrient-dense whole foods!
Tell me… Anyone else into Complete Cookies, cantaloupe and zoodles?

LOVE those cookies! I’m with ya though – unless I just had a 15+ mile run, I can’t justify eating that whole cookie. So if I want one, I split it with My Hus. He’s ALWAYS up for cookies! haha

I haven’t tried those cooke because I saw that half a cookie was the serving size. Who eats HALF a cookie?! Hahaha!

Haha, I know!! The first time I bought one of the cookies, I ate the whole thing & was like, “Wow that cookie made me full!” Then I discovered that there are TWO servings in a package! I must add that they’re giant, dense cookies though… and they’re delicious!

I love zoodles! I usually pair them with some kind of fish or meat, but I love your idea of using chickpeas.

I hate when packaged food is 1/2 serving! (Some of my favorite frozen dinners are like that!) I’m like, come on, I’m not going to heat up this dinner and just eat ONE enchilada! 😉 So I’d be the same way with that cookie! I’ve heard those are good though! They’re on my list of things to try 🙂
