Any fun plans for the weekend? An East coast girlfriend of mine will be in town staying at my house, and we have a lot of fun things planned. I’m excited!
Isn’t it crazy that Halloween is rapidly approaching? I feel like this month is just flying by. Since Halloween obviously reminds me of sweets and the weekends seem to get me in the mood for baking something to satisfy my sweet tooth (or in this case microwaving something deeeelicious), today I have a very yummy single serving dessert recipe to share.
(PS – Did you notice my reflection in the spoon? Ha.)
I hadn’t eaten marshmallows in years since finding out all about gelatin and the foods that it’s hidden in… that is until I discovered that vegan marshmallows existed and bought a package of Dandies vanilla marshmallows. Obviously they aren’t a health food – they’re marshmallows people! – but they don’t have collagen from animal by-products like regular marshmallows, so I’m a happy camper. No boiling of skin, tendons, ligaments, and bones from cows and pigs for me to have dessert, thanks!
As soon as I bought the vegan marshmallows, I started thinking about s’mores. I finally made s’mores over my fire pit last month, but then I wanted to take it a step further and make a s’mores cake. Even better? A single serving s’mores cake that’s perfectly portioned for me to enjoy.
Don’t get me wrong, this s’mores cake is more like an indulgent meal than a little dessert. Even though it’s contained in a cute ramekin, I found it nicely filling and satisfying. When I was recipe testing I actually ate it for lunch one day this week… and I think I just might eat it for lunch again sometime soon. 🙂
To make it, I first crushed up cinnamon graham crackers for the crust. I used a mojito mint grinder, but any kitchen utensil that’ll work for you will do.
I mixed the graham cracker crumbs with a bit of almond milk, maple syrup, and a dash of cinnamon, then spooned it onto the bottom of a ramekin as my s’mores crust.
Next up was making the cake batter. I mixed together some ingredients like flour, cocoa powder, chopped up marshmallow, and chopped dark chocolate chips to make the batter, then poured it on top of the crust.
Lastly is the topping, which incorporates all parts of a s’mores: chocolate, marshmallow and graham cracker, all sprinkled on top for some ooey gooey yumminess once heated.
You bake the ramekin for a minute or so in the microwave, and voila! A s’mores cake all for yourself – unless you’re super nice and like to share.
Single Serving S'mores Cake [Vegan]
Ingredients
- 3 TBSP whole wheat flour
- 1 TBSP cocoa powder
- 1 TBSP light brown sugar
- 3 vegan marshmallows I used the brand Dandies
- 1 TBSP dark chocolate chips
- 2 full cinnamon graham cracker sheets
- 5 TBSP vanilla almond milk divided
- 1 TSP maple syrup
- 1-1 g packet of stevia
- 1/4 TSP vanilla extract
- Pinch of cinnamon
- Dash of salt
Instructions
- Crumble the graham crackers into a small bowl. You may want to use a kitchen utensil to thoroughly crush the crackers into crumbs (I used a mint grinder for mojitos!).
- Reserve 1 TBSP of the crumbs for topping. Add in maple syrup, 2 TBSP of the almond milk, and a dash of cinnamon to the remaining crumbs, and stir to combine. Spoon into a ramekin or mug, and gently pat it down to make your graham cracker crust.
- To make the batter: Combine the flour, cocoa powder, brown sugar, stevia, remaining almond milk, vanilla, a dash of salt and pinch of cinnamon in the same bowl. Stir to combine. Chop the chocolate chips and one of the marshmallows, then add in the chopped marshmallow and half of the chocolate chips to the bowl. Spoon into the ramekin/mug on top of crust.
- Halve the remaining marshmallows. Sprinkle the remaining graham cracker crumbs and chocolate on top of the batter, then place the marshmallow halves on top.
- Heat in the microwave for 75 seconds, or until the cake feels moist but baked and the chocolate is gooey. Enjoy while it's warm!
