Does anyone else feel like the month of June just flew by?!
I can’t believe that the 4th of July is already coming up at the end of this week! To celebrate Independence Day and get into a festive spirit, I came up with a red, white & blue recipe of one of my favorite meals… pancakes!
I haven’t posted a pancake recipe in awhile, and trust me when I tell you that this one is deeeelicious. I’ve seen red, white & blue pancake commercials around for chain restaurants lately, and had the itch to come up with my own homemade version that’s gluten free, vegan, healthy and light.
Being the fruit junky that I am, when I think of red and blue foods, I automatically think of strawberries and blueberries – especially since I had many local strawberries left to eat. For the white part of this recipe, I simply sprinkled shredded coconut on top of the flapjacks – since I have a thing for shredded coconut as of late.
And then there’s the best part: the blueberry sauce. Made with just fresh blueberries, maple syrup and a touch of cinnamon, I couldn’t stop tasting it because it was so yummy!
I usually make pancakes just for myself because my hubby prefers eggs for breakfast, but feel free to multiply the ingredient list to meet your household breakfast needs. I know for sure that this new recipe is now going to become a staple in my kitchen when I’m craving some awesome fruit-filled pancakes!
Red, White & Blue Pancakes
Ingredients
- 1/2 cup dry old fashioned oats certified gluten free if necessary
- 1/2 banana
- 1/2 cup almond milk
- 2/3 cup sliced strawberries
- 2 TBSP shredded coconut
- 2 TBSP pure maple syrup
- 3/4 cup blueberries
- 1 TBSP ground flaxseed meal
- 1/4 TSP vanilla extract
- 1-1 g packet of stevia sweetener
- 1/2 TSP baking powder
- 1/8 TSP cinnamon
- Pinch of salt less than 1/8 TSP
Instructions
- In a food processor or blender, combine the oats, banana, almond milk, flaxseed meal, vanilla extract, baking powder, stevia and pinch of salt. Pulse just until combined and mostly smooth.
- Drop the batter onto a pancake griddle warmed over medium low heat, forming 2-4 pancakes depending on how large you like them. Drop 1/4 cup of the blueberries into the pancakes. Cook until the batter looks bubbly and thickened, then flip and cook on the other side.
- Meanwhile, place the remaining 1/2 cup of blueberries, maple syrup, and cinnamon into a small saucepan over medium heat. Cook until it forms a thick sauce, stirring often.
- Transfer the cooked pancakes onto a plate. Top with hot blueberry sauce, strawberry slices and shredded coconut. Enjoy immediately.

I’ll be ending my July in Jersey at my parents’ house! I’m looking forward to enjoying life in San Diego for the next couple of weeks, then a fun trip to my home state for my best friend’s wedding festivities and to spend time with my family and girlfriends. We’ll also be celebrating both my hubby’s birthday (July 31st) and mine (August 6th) in California by ourselves this month before having birthday festivities in NJ with family, which I’m also excited for!

Pancakes are always a great way to celebrate! I really never need a reason to whip up a batch, love the use of coconut and strawberries to make these blueberry pancakes super patriotic!! I may have pancakes for dinner one day this week!

I also love that every single ingredient in these red, white, and blues is currently in my kitchen.
