I’m currently en route to Miami for my friend Meaghan’s bachelorette party – I haven’t seen her since last fall and am really excited to have an awesome girls’ weekend! – but I have a yummy recipe to share with you guys…
If you read this blog often at all, you probably already know that I love making dessert-like recipes that are actually healthy and can be eaten as snacks or meals as well. Enter Cocoa Banana Blueberry Protein Pudding.
Blue Diamond recently sent me their dark chocolate almonds as well as sea salt almonds to try, and not surprisingly, I’m kind of in love with the dark chocolate ones.
This nutritious snack gives you a nice cocoa flavor that’s not too overpowering. I found myself grabbing a handful to hold me over as dinner was cooking, or as a little something at nighttime.
Since I’m obsessed with all the fruit lately (Okay, who am I kidding? I’m always obsessed with all the fruit, but right now I’m especially obsessed!) I decided to combine some of these chocolate almonds with blueberries, frozen banana, and a few other ingredients to make a pudding.
After all, I had bought 4 containers of blueberries for $5 (Who could resist that deal?) and wanted to use some of them in a recipe instead of just eating them all out of the containers – which is what I did for the most part.
Anyone else eat blueberries in bed?
A few things to note: You can really use fresh or frozen blueberries, but I’d definitely recommend using frozen banana for this recipe. It really gives the pudding a thicker, creamier consistency than regular bananas. If you don’t have dark chocolate almonds available near you, regular almonds will work just fine too. You might want to just throw in a bit of extra cocoa powder in that case.
This is definitely a recipe that I’ll be making often, and I hope you enjoy it!
Cocoa Banana Blueberry Protein Pudding
Ingredients
- 1 frozen banana
- 1/2 cup blueberries
- 1/4 cup Blue Diamond dark chocolate almonds
- 1/2 scoop chocolate protein powder
- 2 TBSP chocolate almond milk soy/rice/regular milk is fine too
- 1 TBSP cocoa powder
- 1/4 TSP stevia
- 1/4 TSP vanilla extract
Instructions
- Combine all ingredients in a food processor. Pulse until smooth. Check the consistency, and add in another TBSP of milk if desired.
- Pour into a bowl and chill for 20 minutes, then enjoy!
- Optional: Reserve half of the almonds for a crunchy topping. Chop them up before sprinkling on top of prepared pudding.

This looks yummy! Though if you couldn’t get hold of those dark chocolate almonds could you use regular almonds and maybe add some natural dark chocolate to the pudding?

Absolutely! I made a quick mention of that in the post somewhere. I’d just use regular almonds and add a bit more cocoa powder… though the addition of dark chocolate would be great too!

Oooh I’m sure, mangoes here in the US sometimes aren’t that flavorful. I just bought this funky smaller mango at the store and I can’t wait to try it… hoping it’s nice and sweet!
