I’ll let you in on a little secret: There are some foods that most healthy living bloggers swoon over I could totally do without. Take brussel sprouts and cauliflower for instance (ick). You’ll find tons and tons of recipes for clever ways to eat brussel sprouts and use cauliflower to craft pizza crusts and make them taste like fries and whatever else you could imagine on foodie blogs, but not on here my friends. Why? Because I am not a fan of those veggies (sue me).
Another good example is oatmeal.
I get in the mood for a bowl of hot oats here and there, but for the most part, I feel very meh about it. Take pancakes away from me and I’d be a very sad girl, but take oatmeal away from me and I wouldn’t even know it was gone.
And so, the alternate title of this post was The Only Oatmeal Recipe I’ll Ever Share, because it seriously probably will be. Any time I make oatmeal, I cook it with a chopped up Granny Smith apple and cinnamon, then mix in creamy peanut butter and honey for a winning breakfast. Because I’m a firm believer that peanut butter + apple + honey is one hell of an awesome combination.
I don’t like oats all runny and thin, so I cook mine to a nice thick mixture. Cooking the apple in with the oats makes it all soft and apple-pie like, and you probably already know that I love anything that tastes like dessert and passes as being healthy.
Yes, oatmeal is like a bowl of comfort – I will give all of you oatmeal lovers that much. Actually, now that I’m looking at all of these oatmeal pictures, I think I may have a bowl of this for breakfast…. 🙂
Baked Apple & Peanut Butter Oatmeal
Ingredients
- 1 Granny Smith apple
- 1/2 cup dry old fashioned oats
- 2 TBSP creamy peanut butter
- 1 TBSP honey
- 1/4 TSP cinnamon plus more for sprinkling
- Dash salt
Instructions
- Chop up the apple. Boil 1 cup of water with a dash of salt in a small pot.
- Add in the oats, chopped apple, and cinnamon, and cook over medium low until you've achieved the desired consistency of your oatmeal, around 4-6 minutes.
- Remove from heat, add in peanut butter and honey, and stir to combine. Sprinkle in more cinnamon if desired.
- Pour into a bowl and enjoy it while it's hot!

I used to hate brussel sprouts too but once I had them fresh and prepared the right way, I loved them! I bet you would too if it were the right dish- just like this oatmeal. PB + apples are one of the best combos ever and I’m sure they taste incredible in this oatmeal. I’m definitely going to give it a try!

You’re hilarious. I used to HATE brussel sprouts AND cauliflower. Actually, I’m sure that the ONLY vegetable I liked up until about 5 years ago, was green beans. haha. Now, I LOVE brussel sprouts! That is sometimes my entire dinner! Mmmm…saute in EVOO with some trader joe’s 21 season salute?! Yes. Please. I don’t LOVE cauliflower, but I will eat it. Oatmeal. I DO go in spurts. I LOVED it growing up, but of course, it was unhealthy boxed kinds…Now, I make it myself but it has to have lots of stuff in it so that it doesn’t taste like cardboard haha. And it HAS to be THICK! If it’s runny, forget it. If I was making it from the instant packets, and it was too runny, I would add another packet! LOL Oh, and I don’t like it with water – has to be some almond or coconut milk. Am I picky?! lol

I’m with you about brussel sprouts and cauliflower. True, I have just posted a recipe containing cauliflower but I could handle it just because I pulsed it in a blender. I like oats instead. I mean, I “moderately” like them. Even though they make my everyday breakfast I find them not extremely tasty, especially when not cooked together with apples. This is my favorite oatmeal too 🙂

It’s funny, I used to hate both brussels and cauliflower, and now I love both. The cauliflower is a new thing, because I’ve discovered that I love it roasted, with garlic and pepper. Otherwise, I’m mostly indifferent to it.
This oatmeal sounds so good! I love foods that contain apples, so I’ll be cooking this one up tomorrow morning.

I love the combination of creamy peanut butter with sweet apples and chewy oats! I made my version of baked Peanut Butter Apple Oats, a vegan version of it and it was delicious.
