Like most Americans – any Americans with a sweet tooth, at least – I have Girl Scout cookie memories. Growing up, my mom had a similar sentiment to the food kept in the house as I do now: lots of healthy food, and then a few “goodies” in one cabinet that were treats we broke out after dinner some nights for dessert.

My mom bought Girl Scout cookies, but she would usually get ones that I deemed weird (and that still wouldn’t be my pick today). I remember some sort of shortbread cookie and something with lemon (ick), and then there were the two I liked the most: Thin Mints and Samoas.
This Girl Scout cookie season, I found myself craving the chocolate mint and chocolate coconut caramel flavors that I looked forward to as a kid for dessert at night. This led to me recreate these flavor combinations in smoothie form (this naturally happened since I’m obsessed with smoothies!), and today I’m sharing my healthy Samoas cookie smoothie.
The idea first came to me when Almond Breeze sent me their almond coconut milk to try and experiment with. My mind automatically thought chocolate, because well, chocolate in smoothies is my favorite thing to devour lately.
I had just dodged a smiling pigtailed little girl outside of a grocery store selling the popular, borderline addictive cookies earlier that day when I was very hungry and not wanting to be tempted to eat a whole sleeve of cookies, so all of a sudden I had the idea for a… Samoas smoothie!
So we’ve got Almond Breeze almond coconut milk as the base. Shredded coconut and frozen banana – because frozen banana adds creaminess to smoothies, and coconut because we’re replicating Samoas here people. The “caramel” part is made with almond butter and maple syrup. And cocoa powder and dark chocolate chips to add chocolatey goodness into the mix. Plus a touch of cinnamon, vanilla and a few handfuls of ice to finish off the smoothie creation, and voila! A healthy, vegan version of Samoas cookies, in smoothie form my friends.

Chocolate Coconut Caramel Smoothie [Vegan & Healthy!]
Ingredients
- 2/3 cup Almond Breeze coconut almond milk
- 1/2 frozen banana
- 2 TBSP shredded coconut
- 1 TBSP cocoa powder
- 1 TBSP almond butter
- 1 TBSP maple syrup
- 1 TBSP dark chocolate chips
- 1/8 TSP cinnamon
- 1/4 TSP vanilla extract
- A few handfuls of ice
Instructions
- Combine all ingredients in a blender and pulse until smooth. Optional: save 1/2 of the coconut and 1/2 of the chocolate chips for topping smoothie with. Pour into a glass, and enjoy!

My favorite girl scout cookies are Thin Mints Samoas and the peanut butter ones (because chocolate and PB were meant to be together!) How ever I have been able to steer clear of all the girl scouts cookies and haven’t had any this year. I do how ever have a bag of the Almond cran-orange crunch (from the gluten free line) sitting on my desk that I have dressed up a few salads with. I will definitely have to give this smoothie a try I have been on a huge green smoothie kick which is basically your watermelon smoothie with spinach in it, my daughter likes me to toss a banana in the mix for hers. How ever I cannot pass up a good “dessert” smoothie and cannot wait to try this recipe!
Oooh I somehow forgot about the peanut butter Girl Scout cookies! Haven’t had those in forever.

Thin mints were always my favorite but I don’t remember trying Samosas. I’ve never been big on caramel flavors so that might be why.
This smoothie, however, looks amazing so I much rather drink one of these than have a cookie. Now I know what to do with my leftover almond breeze! 😉
