Hope that your first full week of January has been awesome, and that you have some fun weekend plans ahead. Speaking of fun, today I’ve got a fun recipe to share with you guys!
Whenever I go food shopping, bananas are always on the list. I buy a ton of bananas! A and I both use them for smoothies almost daily, plus I like to smear bananas with nut butter or top yogurt bowls with banana slices often.
However, I somehow wound up with too many bananas in the house over the past week. We couldn’t eat them fast enough, and before I knew it, I had 5 brown bananas sitting in my fruit basket. I threw a few of them in the freezer for later smoothie use, and then I had a yummy idea for the remaining ones…
….baking some muffins!
Oh, and a muffin party it was… as I wound up eating three of these babies throughout the course of the day after I made them! I just love these tasty bites.
I hadn’t made muffins in way too long, and I have been wanting to make them since a friend of mine told me that she made one of my muffin recipes last week. Sometimes when people mention meals or foods, I just get it stuck in my head until I eat it. I feel like I get cravings like a pregnant lady (nope, I’m not). Anyone else get that way?
Since almond butter is currently back in the #1 nut butter spot for me, I decided to experiment with using almond butter in these muffins. I really like the taste they gave the muffins.
Only eat regular peanut butter? I highly suggest trying other nut butters… almond, cashew and cinnamon raisin peanut butter are my favorites!
I kept the muffins gluten free by making oat flour, simply by putting old fashioned oats in my food processor and pulsing until fine.
Perfect for an on-the-go snack, part of breakfast or lunch, or as dessert, these muffins can be enjoyed whenever your heart desires! Chances are I’ll be eating a few more of them tomorrow. 🙂
Banana Almond Butter Muffins {Vegan & Gluten Free}
Ingredients
- 2 cups old fashioned oats insure you're using certified gluten free oats if necessary
- 2 large brown bananas mashed
- 1/4 cup almond butter
- 3/4 cup almond milk
- 1/2 cup light brown sugar or coconut sugar
- 1 1/2 TSP cinnamon
- 1 TSP vanilla extract
- 1/2 TSP salt
- 1 TSP baking powder
Instructions
- Preheat oven to 350 degrees. Line a muffin tin with 12 muffin cups.
- Place old fashioned oats in a food processor, and pulse until fine.
- Place oats in a medium bowl, then add in cinnamon, salt and baking powder. Stir to combine.
- In another bowl, place mashed banana, almond butter, brown sugar, almond milk and vanilla. Use an electric mixer to combine well.
- Add dry mixture into wet, and beat just until combined.
- Spoon evenly into muffin cups.
- Bake for 15-20 minutes, or until a toothpick comes out clean (Mine baked in 17 minutes).
- Cool slightly on a wire rack, then enjoy!

These look awesome! I love using nut butter in place of oil or regular butter. And cinnamon raisin peanut butter sounds delicious! I’ve never heard of that one before.

YES totally agreed! It also gives smoothies and pancake batter a great texture….which is part of the reason why my household goes through so many bananas!

Ahhhh!! These look beyond amazing!! 🙂 Great recipe girl!! I’ve been wanting to make banana bread for so long! I have some ripe bananas ready to go! …and I hear ya on the almond butter! For all those peanut butter fans out there it’s time they venture to other nut butters!! Great recipe girl!

Very good additional protein for my plant based diet. I didn’t add sugar as I find ripe bananas sweet enough, I used half a cup of flax meal and half a cup of coconut meal instead of two cups of oats. I used soy milk instead of almond milk as I hadn’t made any almond milk. Then I lastly added some 70% lindt dark chocolate on top :). Delicious 😋
