Happy Hump Day!
Being that it has been quite awhile since I linked up to the What I Ate Wednesday blogger party, I decided to join in on this fun this week. Today’s WIAW post features my favorite eats from the past week – because as any normal food blogger, whenever I eat something tasty, I snap a photo or two!
So what goodies has this vegetarian been munching on?
- Black bean & butternut squash sliders topped with fontina cheese {recipe via How Sweet Eats}
These turned out so yummy, plus I love mini sized food!
- ‘Tis the season to get a cold, fa la la la la la la la la la….fighting it with GREEN JUICE! And drinking them in holiday wine glasses of course.
- Minestrone soup – my classic favorite soup
- Yogurt/fruit/nut butter bowls
- Chocolate peanut butter banana protein pancakes {ahh-mazingness}
- Caprese salad with whole wheat garlic knots
- More pancakes…because I seriously eat them at least 2x a week!
- I’ve had a favorite way of eating spaghetti squash for a few years now… but these might be my new #1 way to eat my favorite squash: Italian-style spaghetti squash fritters {recipe via Oh My Veggies}
- I picked up some locally grown guavas at the farmers’ market last weekend, and wow, they are outrageously fragrant! I walk into my house and get hit with the combo scent of tropical fruit and pine from my Christmas tree.
- Whole grain tortilla chips with Mexican shredded cheese, black beans, mashed avocado, salsa and sour cream. I had a major craving for nachos, and this 450-calorie meal left me feeling satisfied!
- Apple cinnamon oatmeal with baked green apple and honey peanut butter. I’m not a huge oatmeal person, but when I do eat it, this is my favorite way for sure. Yum!
- I can’t decide if this was my best or worst purchase from TJ’s last week, but I brought home a tin of holiday popcorn… and I can’t stop snacking on it! I can completely stay away, but there’s no such thing as “just a few handfuls” of holiday popcorn. The other day I said, “Last handful!” and closed the bin THREE separate times before I actually stopped eating it. It’s addictive!

All of your food looks so amazing! I love How Sweet Eats and I’ve been wanting to try out a new veggie burger recipe – yours looked really good, I should give them a try!

OMG everything looks so good!! I want to eat just about everything pictured, but especially the spaghetti squash fritters and I can’t resist popcorn either!

These (minus the guava that I can get here too) are all the dishes I missing the most. You don’t know how much I would love to start my morning with pancakes and enjoy a veggie patty made with black beans!

So interesting, I’m trying to think of a time I lived somewhere when I didn’t have access to my fav foods…. I suppose the only time would be when I spent a few months in the boonies in Florida, without a health food store in sight! But at least you get to enjoy authentic Thai food every day right now 🙂

Mini foods for the win!! I love mini’s, it makes me feel like I’m eating more without actually eating more haha. I think my favorite eats this week were the treats I got in Seattle on Monday, post to come next Monday! 🙂 It’s the little things. HA

So much deliciousness!! Minestrone is one of my favorites. And those pancakes…yum! I need to look into that spaghetti squash recipe too. If that’s your new favorite way to eat it then it must be awesome!

Those butternut squash and black bean burgers look delicious! I had a great veggie burger over the weekend. I think it was made out of sweet potato. I honestly can’t remember. There was hummus on it, which was great!

Oooh yum! I never put hummus on top of my homemade burgers, but I know I’d love it so I need to do that!

Oh my gosh those spaghetti squash fritters are like a saving grace for me! I alllllways mess that veggie up!! That looks foolproof 🙂 And holy crap those Black bean & butternut squash sliders topped with fontina cheese — I want to make them this instant.
