It’s beginning to look a lot like Christmas around here!
My weekend was full of holiday related activities: buying a tree and decorating it, buying outside lights and decorating my front yard, shopping for gifts, and starting this DIY craft…
…a wine cork wreath! I’m not all that crafty but I’ve been wanting to do something with the many corks I have around, so I decided to give it a go! I’ll be sure to share the final product, which I’ll hopefully have done later this week. Chances are I’ll be glue gunning corks at 11 pm tonight!
Coinciding with my holiday cheer, I also did some baking last weekend.
Normally I’m all about dark chocolate, but lately I’m kind of obsessed with these mint chocolate chips:
I’m predicting that my love of them will dissipate once the holidays pass and I’ll go back to eating my more nutritious dark chocolate again, but for now, I’m embracing the mint chips and am enjoying throwing them into smoothies, eating a handful all on their own, or using them in baked goods.
What’s cool about these gluten free cookies is the inclusion of flaxseeds – which give the cookies a bit of a nutty taste and makes them heartier. Flaxseeds provide you with omega-3s and fiber, which is evident in the fact that they make you feel fuller than typical cookies do. I gobbled 3 of these cookies when I made them and considered it a meal because my belly was legit full after.
Side note: Eating cookies as a meal is only somewhat acceptable during the month of December! 🙂
Chocolate Mint Oatmeal Flax Cookies [Gluten Free]
Ingredients
- 1 1/2 cup dry old fashioned oats
- 1/4 cup flaxseeds
- 1/2 cup mint chocolate chips You can use less but I like a lot of chocolate so I used 1/2 cup!
- 3 TBSP safflower oil
- 1/4 cup light brown sugar
- 1/4 cup cocoa powder
- 1/4-1/2 cup almond milk start with 1/4 cup and gradually add more in 1 TBSP at a time as needed
- 1 TSP peppermint extract
- 1 TSP baking powder
- 1/4 TSP salt
Instructions
- Preheat oven to 375 degrees.
- Combine the oats and flaxseeds in a food processor, and pulse well until mixture is ground. You may have some whole flaxseeds still, which is fine.
- Transfer flour to a medium mixing bowl. Add in cocoa powder, light brown sugar, salt and baking powder. Stir to combine well.
- Add in peppermint extract, safflower oil, and 1/4 cup almond milk. Stir together again. Add in more almond milk as needed. Mix in the mint chips.
- Spoon batter onto a greased baking sheet, making 15 cookies.
- Bake until bottoms are lightly browned, about 12 minutes.

I used to be a York Peppermint Patty fanatic so I bet I’d go nuts over those chocolate chips! I really need to get baking – all these Christmas cookies are causing a serious case of FOMO over here! 🙂

There are other combos I like better than chocolate + mint, but I’m not one to turn down chocolate chip mint ice cream! I love using flax seed in baking… it works so well with so many things!

Chocolate and mint is equal to chocolate and peanut butter in my book. YUM! And I can’t WAIT to see the cork wreath!!! I have a big bag of corks b/c I saw a pinterest wreath with them, but i’m not crafty either, so I”ve done nothing with them. lol. But your wreath looks a little easier than the one I saw, so maybe it’s time I make mine….

These sound amazing and I love that they’re mostly healthy 🙂 I am always surprised by how much I like the mint + chocolate combo because I tend to forget that I do. I spent the weekend doing christmassy things too, so these would have been nice to have around!
