Last weekend my mother-in-law, hubby, and I were sitting at my kitchen table. We had just finished up a yummy dinner, and all of a sudden, I jumped up.
ME: “Ooooh I have to make dessert now!”
THEM: “But we’re pretty full. Why the rush?”
ME: “Because it’s going to get dark soon!”
THEM: “We’re using the grill for it? We can still grill after the sun goes down.”
ME: “No we can’t, because I have a feeling it’s going to be yummy, and if it gets dark, then I can’t take pictures and blog the recipe!”
Ah yes, bad lighting… classic case of #foodbloggerproblems.
This dessert idea started when I nabbed some local nectarines. I hadn’t grilled fruit yet this summer and had it on my list of things to do sometime in August. And so, I decided I would throw my nectarines on the grill.
Or more accurately, I frantically sliced the nectarines, then recruited my hubby to swiftly throw them on the grill while there was still light…
I was trying to think of what to pair the grilled nectarines with, and then it hit me… frozen banana “ice cream” would be perfect.
Random tidbit: I eat bananas nearly every day, yet never just on their own — always in a smoothie, smeared with nut butter, in a yogurt bowl, or topping off my cereal.
Anyways, in preparation for this dessert, I sliced a couple of bananas and threw them in the freezer earlier that day.
While the nectarines were grilling, I combined the banana slices with honey, cinnamon, and vanilla extract in my food processor, pulsing until it was a creamy, ice cream-like soft serve.
And while these dessert cups came together just a few moments too late for ideal lighting, I managed to snap a few photos of the finished product at dusk to share with you, my friends.
This recipe is ideal for a guilt-free treat on a warm day. One serving of this recipe provides you with three servings of fruit – not too shabby!
Grilled Nectarines with Honey Banana Soft Serve
Ingredients
- 3 medium nectarines
- 3 bananas sliced and frozen
- 2 TBSP honey
- 1/4 TSP cinnamon
- 1/2 TSP vanilla extract
- Safflower oil for brushing
Instructions
- Brush your grill with safflower oil (I removed the racks to brush them, then placed them back on the grill.).
- Slice the nectarines. Arrange on the grill, and grill the slices over heat high until fruit is tender and blackened on the side facing down.
- Meanwhile, place the frozen banana slices, honey, cinnamon, and vanilla extract in a food processor. Pulse until creamy. You may need to scrape down the sides once or twice before the mixture smoothes out. Just keep on pulsing until it turns into a soft ice cream-like consistency!
- Spoon the soft serve into three small cups. Evenly divide the grilled nectarines on top. Enjoy immediately!

Ahaha! I love it! I’m the exact same way. Sadly I’ve made some good things lately but I’ve been eating dinner at like 9 or 10pm waaaaay after the sun goes down! Plus the lighting in my apt is particularly terrible so there is no hope for me.
This dessert does look delish!
