Before I get to my awesome pancake recipe today, I have a few random things to share with you:
1.) This week I officially started school at the Institute for Integrative Nutrition! I’m really excited about the class and connecting with other students. I just feel like everything I’ve read, seen, and heard so far at IIN resonates with me so much and makes me feel so motivated. I’ll definitely be sharing some concepts and ideas of the course that I find interesting throughout the year, so stay tuned!
2.) I’m in love with ordering canvas prints of neat photos I’ve taken. The above canvas is my latest order, which I got for $20 via a Groupon deal. The picture is from my trip to Livermore Valley last year during harvest season, and I’m pretty much in love with it.

Not surprisingly, my undying love for pancakes continues.
I just love whipping up healthy pancake batter a couple times a week, and after buying a huge container of blueberries last week, I knew that I’d use some of them to make pancakes ASAP. I decided to get creative last weekend and spice up my pancakes a bit by including lemon zest. Blueberries and lemon just make an awesome combo! These pancakes aren’t overly lemony – just a hint of lemon with lots of blueberry, oatmeal and flaxseed goodness.
Blueberry Lemon Oatmeal Flaxseed Pancakes
Ingredients
- 1/2 cup old fashioned oats
- 2 TBSP ground flaxseed meal
- 1/2 cup almond milk or any other kind of milk
- 1/2 banana
- 1/2 cup blueberries
- 1 TSP lemon zest plus additional for topping pancakes
- 1/2 TSP baking powder
- 1 stevia packet optional (adds some sweetness if you're using unsweetened milk)
- A pinch of salt
Instructions
- In a blender, pulse the oats, flaxseed, almond milk, banana, lemon zest, baking powder, salt, and stevia until smooth.
- Pour batter and form 3 pancakes onto a pan heated over medium heat and coated with cooking spray.
- Push several blueberries into each pancake (you may have some left over). Cook pancakes until bubbles form and the bottoms are lightly browned, then flip and cook for another few minutes.
- Place pancakes on a plate, top with syrup, butter, or honey, and any leftover blueberries and additional lemon zest if you choose.

Oh my gosh you are the sweetest! I don’t think it’s creepy at all, though I did cringe a little bit thinking about what my posts were like for probably the first 6 months of blogging. Ha! Well hey, it’s a journey right? I’d like to think that I’ve come a long way in my blogging skills – though I still have some learning to do 🙂
And also, I actually had a dilemma about buying the blueberries because there were from Trader Joe’s and not at all local. I usually shy away from buying food that has traveled for 1,000 miles, but I really wanted blueberries!

Ohhh these look so good! I want some right now! I LOVE the idea of putting your photos on canvas. I was thinking of getting some of my photos printed and blown up for our apt but canvas sounds even better! Good luck with your first week!
