It's Sunday night already, and I'm wondering -- where did the weekend go?! A couple days ago while running errands, I stopped at the Lululemon outlet store for the first time. Though it has less of a selection than the regular store, it was awesome because it was still their cute clothes, only cheaper (well duh, I suppose that's the usual MO of an outlet store!). I had seen a really cute hoodie at the regular Lululemon during my birthday shopping trip, but the price tag was a little too steep for me. I was more in need of yoga pants and sports bras than a zip up, so I skipped it. At the outlets, I found a cute hoodie and got it 70% off its original price. Score! When I got home, I noticed the shopping bag that my purchase came in. It's covered with life mantras and quotes, most of which ... [Read More]

Five Fun Facts on this Fabulous Friday
Hello, and yay for the weekend being here! As you may have guessed based on my alliteration of a blog post title, I'm keepin' it light and sharing some random things with you tonight (and also partly because it has been a homemade pizza & wine night for me, so I'm sipping a glass of local grenache wine and feeling all nice and relaxed at the moment ;-) ). #1 - Though I think it's ridiculous that Halloween & even Thanksgiving decor is already popping up in stores everywhere since September began, I am all about getting on the fall pumpkin bandwagon. This week I bought a pumpkin pie candle -- smells so yummy! It's only a matter of time before I start making pumpkin pancakes and smoothies on a daily basis. I think I'll wait until it drops below 90 degrees here! #2 - I've been ... [Read More]
Thursday Travel Throwback: NOLA
Happy Thursday! I can't believe it's almost the end of the week already. I've been off with the days all week, but don't short work weeks rock? I've been enjoying the official kickoff to the NFL season this evening with my little family and this grub... ...nachos! I healthified (how is this not a real word?) them a bit by using multigrain chips and light cheese, and adding veggie crumbles and lots of avocado, tomato & lettuce. Yum. Today is my last post in my Thursday Travel Throwback series, as I'm leaving for my Euro trip in less than a week! Previous posts in the series have included Sicily, Hawaii, and a cross-country trip... and today I'm going to share with you my long weekend getaway to New Orleans! In 2009, my Marine and I briefly lived in Florida near Pensacola in ... [Read More]
Mixed Green Salad with Blueberries, Goat Cheese & Honeyed Walnut -n- Hemp Seed Clusters
A few weeks ago, I stopped at the Vitamin Shoppe to pick up a few goodies (and buy my first box of Quest bars!), and they had a store party going on. I walked out with a bag of samples to try, which I was obviously excited about. It's the little things in life people! One of the samples in the bag were hemp seeds, which I've heard a lot about but have never tried (at home at least). Today I used my sample and whipped up one awesome salad for lunch. I adapted this recipe from Vegetarian Times, switching around some ingredients and amounts, and making a single serving portion since it was just little ole me. You can view their original recipe here. To make the clusters, I toasted the hemp seeds with walnut pieces, honey and cinnamon. So easy to make, and such a tasty addition to a ... [Read More]
Oven Baked Zucchini Fries
Some days I'd love nothing more then to experiment in the kitchen for hours. Other days, I'm not in the mood for playing around when it comes to my eats. The latter was the case over Labor Day weekend. The entire three days, I just wanted to make some yummy food in as short amount of time as possible. This was my masterpiece-in-less-than-thirty-minutes meal of the weekend: It all started off with one my favorite veggies, zucchini: I adore zucchini fries. Almost anytime I see them on a restaurant menu, I'm compelled to order them. I've made zucchini fries at home numerous times, but for some reason they haven't made it onto the blog thus far, so today I'm sharing my version of zucchini fries! First, I cut the zucchinis into fry-like pieces: Next I whisk an egg in a bowl, and ... [Read More]
Labor Day Snapshots & National Yoga Month
Happy Labor Day & September! Besides getting some freelance work done, the past 3 days have been all about relaxation and fun for me. Here are some snapshots from my weekend: Food appetizer dinner night: oven baked zucchini fries (more on these later this week!) + heirloom tomato & avocado bruschetta whole wheat apple cinnamon pancakes drizzled with honey: quinoa brown rice bowl with feta, avocado, zucchini & tomatoes: Chipotle veggie burrito bowl (the closest I get to fast food dining!): Fun Yesterday we wanted to go somewhere to enjoy the sun, but also wanted to take Harley girl with us. We decided to go to a nearby spot we've visited a few times this year, called Uvas Reservoir. I really like the reservoir because it's pretty, dogs are allowed, ... [Read More]
