Hi friends!
Since we’re on the backend of this week (YAY for Friday tomorrow!), I thought I’d share a few of my favorite eats from the past several days.
While I wasn’t feeling green monsters last week and sort of took a short hiatus from them, I’ve been back at it this week drinking them as my morning fuel. This week’s pick: strawberry apple cucumber spinach swiss chard juice.
My thoughtful, wonderful grandma made my day at the beginning of the week when I opened my door to find this Edible Arrangements fruit delivery from her. She sent them to me as a “hope your foot feels better soon” gift. I’ve been enjoying the fruit from it every day!
This is the grandma whose hospital bed I sat by in the ICU for weeks back in February in NJ, who just finished chemo and is now starting radiation, thinking to send ME a gift to cheer me up because I told her I was bumming about my foot injury. Is she not the sweetest woman on the planet?
During my last food store run, I picked up a jar of Justin’s chocolate hazelnut butter. This stuff is seriously AMAZING! It’s like Nutella, but better for you. Nutella’s first ingredient is sugar. Here’s the ingredient list for this stuff: dry roasted hazelnuts, dry roasted almonds, organic evaporated cane sugar, organic cocoa, organic cocoa butter, organic palm fruit oil, vanilla, sea salt. I love it with fruit or eating a spoonful straight out of the jar.
I picked up a package of these steamed ones at Trader Joe’s last week for the first time, and am loving them! I’ve eaten them plain, with brown rice + avocado + bell pepper for a quick, nutritious meal…
…and also as a side to a veggie quesadilla dinner.
Last but certainly not least, I’ve been whipping up this strawberry banana smoothie frequently for the past couple of weeks:
In the mix:
- 1 cup frozen strawberries
- 1/2 frozen banana
- 1 cup unsweetened almond milk
- 1/2 scoop vanilla whey protein powder
- 1/4 TSP vanilla extract
- 1 packet of stevia sweetener
It’s so yummy, and only 200 calories – making it perfect as a snack or mini meal.

Hmmm I’ve never tried the juice combo of strawberry, apple, cucumber, spinach, and swiss chard – need to make that soon! I usually just am boring with my juicer and stick with apple, orange, and carrots.

You should try it. A lot of the time I just throw in whatever ingredients I pull out of my produce drawers. Sometimes it turns out great, other times not so much! Haha.
