It’s officially Memorial Day weekend! I hope that all of you reading this who are living in the states have lots of fun plans for your [hopefully long] weekend. I am super excited for the next couple of days. In the morning Adam and I are heading up to Napa for the weekend! It is a much needed mini vacay for us, and will definitely be involving some of our favorite things – wine, hiking, food, and time together!
I have the perfect recipe to share today for those of you looking for a fancy, healthy breakfast recipe to try out over this holiday weekend:
A couple of days ago, I realized that I hadn’t used my waffle maker in quite awhile. Obviously this realization called for my whipping up of a new waffle recipe ASAP. I mixed ingredients up as I went along, which can either turn out really well or really bad. Luckily, this time it was a success!
I’ve had a truvia/sugar baking blend in my cabinet for awhile, and decided to try it out for this recipe. I like truvia because it’s made from the stevia leaf extract, a natural sweetener. This blend has 15 calories per 1 TBSP serving, verses 45 calories in regular sugar, and it’s sweeter than typical sugar so you don’t have to use as much. According to the bag’s conversion chart, it’s 1:2 of truvia baking blend to sugar.
I used whole wheat flour, wheat germ, and chia seeds to make these waffles hearty and delicious. For the sauce, I simply combined strawberries, the truvia baking blend, and water on the stove to make a syrupy sweet waffle topping.
If you really want to get crazy, you can add some dark chocolate chips to the waffles. It makes for quite a decadent lazy weekend morning breakfast. 🙂
Hearty Whole Wheat Waffles with Strawberry Sauce
Ingredients
- 1 cup whole wheat flour
- 1/4 cup wheat germ
- 2 TBSP chia seeds
- 2 cup strawberries sliced
- 1 1/2 cups unsweetened almond milk
- 2 TBSP vegetable oil
- 1/2 TSP vanilla extract
- 1 TBSP baking powder
- 1/4 TSP salt
- 1/2 TSP cinnamon
- 1/4 cup truvia sweetener baking blend or 1/2 cup regular sugar
Instructions
- Heat your waffle maker to medium high heat. Coat with cooking spray.
- In a large bowl, combine the whole wheat flour, wheat germ, chia seeds, baking powder, salt, cinnamon and 1 TBSP of truvia baking blend.
- In another bowl, mix together almond milk, oil and vanilla. Pour the wet ingredients into the dry and stir until smooth.
- Pour waffle mix into waffle maker and form 4 waffles. Cook until lightly browned.
- Meanwhile, in a small saucepan over medium heat, add the remaining truvia blend and water. Add sliced strawberries to the pan and stir. Allow the mixture to cook until it becomes thick and syrupy.
- Evenly pour the strawberry syrup over the cooked waffles, and immediately enjoy!
