Hi friends! It's been a pretty draining week so far being at the hospital with my grandma, but I'm hanging in there along with everyone in my family. Since I've pretty much been living off of bananas, protein bars, Greek yogurts, and almonds the past couple of days and have no fun new eats to talk about, what I do want to share is something I read on The Idealist Revolution. Happy Super Bowl Sunday from the chilly, snowy East coast! I flew into Jersey yesterday to see my family. We recently got word that my grandma, who I've always been very close with, has cancer and needs to undergo a serious surgery. I wanted to come out here to visit her in the hospital and spend time with my loved ones, so I booked a last minute ticket. 2,500 miles is just a hop, skip, and a jump away when someone I love is sick! Most of my time this week is going to be spent at the hospital, hanging with my family, and getting work done, but I still want to live really healthily this week, especially to keep on track with my DietBet. Roasted-Vegetable Soup with Sun-Dried Tomato Pesto
Last weekend was rainy, chilly, and low key - the perfect scenario to try making a new soup. My hubby recently gave me the Williams-Sonoma Soup cookbook, and I was itching to make a recipe from it. This is what I wound up making: The pesto adds a flavorful punch to this vitamin-packed soup. As usual, I altered the ingredient list a bit based on personal preference - i.e. I'm allergic to eggplant so I obviously nixed that; I used vegetable broth instead of chicken; I didn't have the leeks on hand that it called for.
