Since I usually whip one up every few weeks anyways, I couldn't miss out on celebrating by making a pizza this Friday evening! Tonight I went with a bit of a different combo, pairing fontina, mozzarella, and asiago cheeses with heirloom tomatoes and fresh basil. I went to Trader Joe's to pick up my usual whole wheat dough, but unfortunately they only had plain left. My New Favorite Salad Combo
Hello, hello! I realized that I haven't posted my day's eats in awhile, so to answer the question, ''What the hell does this vegetarian eat all day?" here goes my rundown from yesterday's meals & snacks: Wednesday is a bit of a different day for me food-wise than any other day. I volunteer at The Humane Society in the evenings, so I eat a quick early dinner and eat 1 snack instead of 2 for the day. Because of this, I usually make my breakfast or lunch heavier than usual. For breakfast, I ate some oatmeal with sliced banana, a pack of Justin's honey peanut butter, and sprinkled cinnamon: For lunch, I ate my new favorite salad. Health & Fitness Goals for 2013
While I'm not too crazy about the term ''New Year's resolution," I am most definitely a lover of goal setting in general. I jot down to-do lists all the time, which in essence are a bunch of short term goals I want to accomplish (even if ''do your laundry" is a rather small one!). For 2013, there are a few goals related to healthy living that I want to work on. I thought I'd share them with you, so here goes: For around 3 months, I've been going to physical therapy to rehab my torn calf. I'm happy to say that it's been feeling really good lately! The injury had been causing problems in my achilles and foot, but lately I haven't had pain in those areas. Blueberry, Banana -n- Oats Pancakes
At the beginning of each new year, I constantly find myself entertaining thoughts of ''firsts." Yesterday was my first hike of 2013 (and Adam and Harley's too!). Now that I'm getting over this energy zapping cold (WOOHOO!!), today I had my first gym session of the year. And a few days ago, I whipped up my first pancake recipe of 2013: These pancakes are full of goodness -- blueberries high in antioxidants, bananas loaded with potassium, and fiber-full oats. Coronado Dog Beach
Yesterday Adam and I took Harley to the dog beach in Coronado. We usually go to Ocean Beach to let her run around and play, but I wanted to try a different spot for a change. Coronado is an absolutely gorgeous island that we hadn't been to in awhile. I had no doubt that the dog beach would be beautiful and full of friendly people and dogs, which is was. It was a perfect day outside and it felt great to be back at the beach after a month or so hiatus (yes, I'm spoiled!). I dream of living in Coronado one day! Chocolate Bark with Pistachios & Dried Cranberries
Hi friends! This Friday night in my household is totally relaxed. I am still under the weather with an upper respiratory thing, and my hubby had a tooth pulled earlier today, so we both felt like being couch potatoes. Our evening has consisted of me making us a dinner of homemade tomato soup, getting some fro yo, and now we're currently watching a college football game. Even Harley's joining in on the laziness and has been snoozing.
