Hope your week is off to a good start! It was just another manic Monday for me. I had a good day, it was just go-go-go. And when I finally sat down to relax tonight, I decided that an alcoholic beverage was a fabulous idea. Usually wine is my choice of drink, but tonight I had something else in mind that revolved around this super fruit:
Kiwi is packed with a lot of goodness, including fiber, Vitamin C and folic acid. I saw a recipe for a kiwi daiquiri in Women’s Health magazine somewhat recently and ripped the page out to make it sometime in the future. Tonight seemed as good as any to try it! Call me a sissy, but the drink tasted a bit too strong to me, so I added some flavored sparkling water to dilute the rum a bit.
Kiwi Daiquiri
Ingredients
- 1.5 oz white rum
- 1 kiwi peeled and quartered
- 1 TBSP lime juice
- 2.5 TSP agave nectar
- 1 cup crushed ice
- Cherry flavored sparkling water to taste, optional
Instructions
- Puree the rum, kiwi, lime juice, agave nectar, and ice in a blender.
- Taste test it, and if it seems too strong as it did to me, add some sparkling water to the mix.
- Pour into a chilled glass and enjoy.

Side note: As I was typing this blog post, I dropped my glass and spilled half of my kiwi daiquiri on my couch. Whomp. Guess I better just call it a night!
