For the past several years, I have not been a fan of lime. I think it’s mostly because I’ve been scarred from a, uh, night of too many tequila & lime shots a long time ago. However, I now think that my lime hating days are over! Recently I’ve had a few key lime martinis and have enjoyed them, a couple weeks ago I started munching on key lime gum and didn’t mind it, and then today I drank this:
Bright and early first thing this morning, I took Harley hiking. Besides Harley’s continuous attempts to eat random poop on the ground due to her electing not to eat breakfast before we went (yeah, gross!), it was a typical hike for us — which means it was full of sweat, elevated heart rates, tired legs, and lots of endorphins flowing. When I got home, I wanted a nice cold smoothie to help me recharge.
But I was out of my usual smoothie fruits and only had a choice between incorporating kiwis or peaches. I chose to use kiwis, and decided that kiwi and lime sounded like a good combo… and it was!
Kiwi Lime Smoothie
Ingredients
- 2 kiwis quartered without skins
- 1 cup almond milk
- A pinch of Stevia sweetener optional
- 1 TBSP lime juice
- 1 cup of vanilla Greek yogurt regular or dairy free both work
- 1 TSP vanilla extract
- 1 TBSP graham cracker crumbs or vegan marshmallows for topping
- Ice
Instructions
- Combine the kiwis, milk, stevia, lime juice, yogurt, vanilla extract, and ice in a blender. Pulse until well combined.
- Pour into a tall glass and sprinkle graham cracker crumbs or mini marshmallows on top.
