Tomorrow morning I’m heading overseas to Amsterdam for a work trip. I’ve been to the Netherlands once before for work and absolutely loved it. Now I get to go back for a trade show, and am looking forward to getting to see more of the city!
For dinner tonight, I wanted to use produce that will probably otherwise go bad while I’m traveling. In the bottom of my fridge, I spotted 3 large squash. Being 99.9% sure that Adam would not be using them when left to his own devices in making meals, I decided to use them to make squash fritters:
